Easy brunch type stuff

I like the idea of socializing with mummy friends over brunch now that I am back working full time.

I don't like the sheer focussed effort involved in cooking bacon, sausages, eggs, baked beans, mushrooms, tomatoes etc all together to be ready at the same time. Especially when my little one just wants to be cuddled.

What can I make that wouldn't need a lot of last minute attention?

buffet type stuff? soup in a slow cooker and lots of crusty bread?

Salad, bread, different cheeses, ham, fruit salad type things is what I mean by buffet stuff. You could ask everyone coming to contribute one thing to make it less effort all round.

Or do what I used to do and just head out to somewhere like Pizza Hut when they're doing an all you can eat for £5 a head

Brunch to me never means a full english fry-up

It just means eating lunch a bit earlier

Yeah, snap - brunch for me is early lunch, but if you want breakfast stuff I'd aim for continental style and have croisants, pain au chocolat and some fruit etc.

By the way, this is prob really bad, but I don't really tend to do scrambled eggs much and I worry about them catching or going into one big lump or going all wrong somehow. Any advice? Can I make them and stir them a bit and just leave them or do they need constant attention till the minute they're eaten?

Would poached eggs go with smoked salmon instead?

Or freshly done hardboiled ones?

And a Caesar salad perhaps?

Or some pancakes? (Blini? pancakes?) But then if I did maple syrup and bacon as well would I be getting back to the full English hassle?

Or muffins? But what sort of muffins (I don't really do berakfast muffins either)

scrambled eggs only take a few minites to make. you do have to give it constand attention till done (well just about). i tend to make them in the microwave.

crack eggs in dish.
beat eggs add salt and pepper beat a little more.
then place in microwave for 5seconds.
take out mix up.
put back in microwave for 5 seconds.
take out mix up.
and carry on like this until cooked how you want then it doesn't go into a lump as long as stired well befre put back in.
i find that doing them in the microwave is always better because if there is something you need to attend to you can stop the microwave so the eggs dont overcook. attend to what is needed then go back to the eggs after.

smoked salmon is also good in a nice salad with a squeeze of lemon juice. or with asparagus (grilled or raw) with a squeeze of lemon juice.

Stop cooking scrambled eggs while they are still dead runny. By the time you serve them they will be perfecto.
