Anyone got an easy cake recipe?

My mate is becoming a domestic goddess so I feel the need to compete

I fancy making an easy cake tonight and wondered if anyones got a fave they care to share?

Dorset Apple Cake - it's scrummy but really easy.

8oz self raising flour
pinch of salt
4oz butter or margarine
2oz raisins
2 eating apples, peeled, cored and roughly chopped
3 oz granulated sugar
1 egg, beaten
2 tablespoons milk

Sift the flour and salt, rub in the butter until it resembles breadcrumbs

Stir in the raisins, apples and sugar

Add the egg and milk, mix with a knife. The dough will be soft.

Spoon the mixture into a greased 8" sandwich tin

Bake at 180C for about 50 minutes, or until a skewer inserted into the middle comes out clean. You may need to cover the cake with tin foil if it cooks too quickly on the outside.

Cool in the tin. When you turn it out, sprinkle with extra sugar.

Lovely served still warm, nearly as nice eaten cold.

buy a packet mix and just add an egg

mine usually tiffini I love cooking savoury food though.

My Dorset apple cake is in the oven I'm going to have a big chunk with icecream when it comes out. The boys begged me not to put raisins in but....

DS1 and I have just eaten some, he liked the raisins.....bah!! DS2 had a piece (he only eats peanut butter sarnies) and ate the top. I had mine with chocolate brownie ice cream and I'm trying to stop myself from going for 2nds..

EGGLESS CHOC CAKE (v.v.simple)

Grease & line 2 8" Sandwich tins

Whisk together in jug: 8fluid oz milk, 4 fl oz oil, 1 tsp vinegar, .5tsp vanilla essence.

Sieve together: 8oz plain flour, 8oz castor sugar, 2oz cocoa, .25 tsp Bicarb Soda, 1 level tsp Baking Powder, .25 tsp salt.

Stir liquid ingredients into dry. Beat well with wooden spoon to a smooth slack. Pour into tins. Bake at 190 Degrees C /Gas 5 for approx 25 mins. Fill with buttercream, top with choc icing.
