anyone make their own muesli?

dd1 has had so many strops re breakfast we are going to have a go at making own muesli. Want to break the Cheerios cycle as well.

Googling has left me overwhelmed; a lot suggest soaking in yogurt, which would be fine for me and kids but dh hates yogurt and wants to eat it too; could we soak ours and not his? or does it need soaking at all? do you have to soak your breakfast every single night?

there are a couple of recipes on MN but I can't just follow those, that would be too simple, I have to make a huge song and dance about every tiny detail of my life

please help a muesli virgin.

No but I make my own granola which is lovely and flapjacky tasting and very easy to do if any help.

That all sounds very confusing

Work out what you like in your muesli. And take that and mix it all together.

Fwiw, I made my most recent mix with normal porridge oats, chopped hazlenuts, linseeds, chopped dried apricots, raisins. I soak it in milk for about 15 minutes before I eat it.

not overnight? googling suggests overnight

I imagined myself getting halfway to sleep and then having to tramp downstairs at midnight to soak the muesli

This granola is lethal - made it the other week and scoffed the lot in a couple of days...

Regard the ingredients as a list of suggestions rather than gospel (apart from the oats obviously!).

300g oats
100g flaked almonds
50g each of sunflower seeds, pumpkin seeds and sesame seeds
125g maple syrup
2tbsp honey
2tbsp vegetable oil
1tsp vanilla extract

Mix these all together and put in a pre heated oven (150C) for 15 minutes.

Then stir in 150g dried fruit of your choice and 50g of dessicated coconut.

Cook for another 15 mins.

Great with milk or natural yoghurt.

Yes I make my own muisli.

It's simple.

  1. You go buy whatever grains and cereals you want in it. Anything. Oats, rye flakes, bran flakes, you can buy muisli bases that are just mixes of cereals, or just one type (I like rye flakes personally, DS prefers jumbo oats).You can use packet cereal too like all bran and grape nuts if you want. I sometimes like to add rice crispies to my muisli for a lighter base.
  1. You decide what, if any, dried fruit you want to add. Then you buy this and add it. Any dried fruit.
  1. You decide what, if any, nuts and/or seeds you want to add. You buy those. If they are raw you toast them first, unless you prefer them raw.
  1. Mix everythin from 1, 2 and 3 together in any combination you want. It's up to you. Make a big batch and store it in an airtight container. Will keep for yonks.
  1. If you want soaked muisli, you prepare it before going to bed by adding milk or yoghurt or juice or whatever.
  1. If you don't like soaked muisli (I don't) then you skip step 5.
  1. When you're ready to eat it, add milk, yoghurt, and fresh fruit if you want. Stewed apple is also good to add at this point.

I make my own muesli as I hate raisins/sultanas/etc.

I buy muesli base, porridge oats, chopped nuts, seeds, coconut, chopped dates, whatever else I fancy and make a big batch and keep it in a large lock-and-lock container.

I do not soak it overnight - just add milk in the morning.
Are you expected to soak the likes of Alpen overnight? Don't bother!

My Special Granola:

heat enough veg oil to cover the bottom of a heavy based saucepan (just a thin layer of oil) with two tablespoons of honey and 1 tablespoon of brown sugar. When the sugar has melted add a whole load of oats (any oats will do, a mix of fine porridge oats and jumbp is nice) and any seeds and nuts you want. I like chopped hazelnuts and sesame seeds. Mix it all together so it's all coated evenly in the oil sugar mixture.

Transfer it all to a roasting tin and pop in a preheated warm oven (about 120 C) for 30 minutes, taking out every ten minutes to stir. It should ll be lovely and golden brown and crunchy by this point. If it isn't leave it in for longer.

When cool, add your dried fruit. I like chopped dates personally, but anything goes.

Store in an airtight container.

Bircher muuesli is very delicious and wholesome: Soak 300g porridge oats with 400g apple juice overnight. In the morning add any of the following: yogurt, grated apple, sliced banana, defrosted blueberries, flaked almonds, any seeds or nuts you fancy, honey, dried fruit, pinch of cinnamon. I am eating some tomorrow - wish it was ready right now! You can soak dried fruit in with the oats overnight too.

made by accident sinful granola - had baked flapjacks from Nigella's recipe in how to be domestic Goddes (errors in ingredients updated from her website). They looked hopeful but far too crumbly. Tasted fab, prob due to large amounts butter and golden syrup! So I crumbled them up completely next day and re-toasted in oven. Have just scoffed bowlful wit fresh stawberries and rasps and greek yogurt, kidding myself it's healthy because it has oats in it
