Risotto recipe help please

When I started cooking as a teenager my mum had a recipe for chicken risotto - that included chicken, white wine, a couple of fresh tomatoes and that is all I can remember this would have been in the mid 90's - I have no idea which book I got it out of - does anyone have a recipe that sounds a bit like this...I know it's a long shot - but pregnancy brings strange cravings. It may have been a Hamlyn cook book or Australian Womens Weekls one and those are my only clues.

Melt a knob of butter in a heavy bottomed frying pan (avoid non stick!)chop an onion and saute in butter. Add a cup of risotto rice and stir for until rice and onion mixed. Pour over glass of white wine and stir until all absorbed. Add about the same amount of stock and stir again until all absorbed. Repeat until risotto cooked will take approx 18 - 20 mins to get to this stage. Turn off heat, add cooked chicken, chopped fresh tomatoes and a handful of finely grated cheese (should be parmasen but if you're avoiding this during pregnancy use cheddar!)Put a lid over the pan and leave to stand for 3 minutes. Enjoy!

Repeat with the stock, not the wine, I think you mean!

Thanks for that notperfectmum will give it a try. Am I supposed to be avoiding Parmesan btw?

You can eat Parmesan! It's a hard cheese.

If you are avoiding any cheese, it is soft mould ripened cheese (eg Brie) and blue veined cheeses. Hard cheese is perfectly OK. Enjoy your risotto!

Sorry if alarmed you re the parmesan - I was told to avoid it when I was pregnant with DC1 as it is made from unpasturised milk, but have double checked and JulesJules is absolutely right - you can eat it as it is a hard cheese.
