How can I freeze celery?

It was bogof in Tesco and I don't want to make it into soup.

I'm thinking it probably won't freeze well raw as there's so much water in it. Has anyone tryed sauteing and freezing for putting into mince/pasta sauces etc?

Seriously, I would freeze it but maybe chop before freezing and cook it rather than trying to serve it uncooked. Think you'd end up with celery sludge.

Yes, you can freeze it.

Trim off the green leaves and the root.
Cut stalks into even sized pieces.

Blanch in boiling water for 3 minutes and then drain.
Plunge immediately into a bowl of iced water to cool. Drain again and dry on kitchen paper. Pack in convenient amounts in ploythene bags, remove the air, seal and label. Freeze.

Ok for 9 months in the freezer.

Don't put too much celery in cooked dishes that you plan to freeze - the flavur becomes very strong when thawed.

I'm freezing it to use in cooking so mushyness doesn't really matter as long as the flavour is still there.

Will blanche it before freezing. Thanks!

I don't bother blanching. I just chop it up, and bag it in 1-stick portions then freezs. Great for making stock.
