Polenta - what to do?

I have half a bag of polenta left over from a cake made for DP's Birthday (he's coeliac), I would love to hear your suggestions for interesting things to do with the rest

Whisk it into a pan of hot stock over the heat. Keep stirring it for about 20 minutes, until the grains are cooked.
You can add butter, parmesan etc if you want. Then pour it into an oven dish, leave it to cool and solidify.

Cut into chunky chip sized pieces, toss them in olive oil and bake in a hot oven for 10 mins or so.

This makes a really nice accompaniment to a chilli if you fancy a change from rice.

Bucharest - I had it once as a kind of mash and it was vile. My polenta chips are really nice, but do need seasoning well. Honest!

Aubergenie, that sounds good. We eat lots of rice now, can get a bit boring! Do you think I could free the chips once baked, or before baking?

Must admit, I've only had the mush-mash...v disconcerted as I thought it was some kind of root veg trendy mash and then discovered the gritty bits.....
Might try the chips.....

Gloria - Do you mean make the chip shapes? if so, do it before baking.

I just checked a recipe I have and you need about 1200 mls of stock to 250g of polenta.

On it's own polenta isnt a great taste. Same as couscous without flavouring.

However DH who is Italian and a chef! does polenta with a rich beef stew and he puts gorgonzola under a pile of polenta so the cheese melts and goes gooey and it is divine!
