I know it as ozzy cake but googling ozzy cake throws up no results. it's quite brownie-like in texture - something between a cake and a biscuit, but doesn't involve chocolate - more like a plain cake in taste. it has a bit of dried fruit in it and a sprinkling of brown sugar on the top. I really fancy making some and can;t find a recipe. any ideas?

Could it be "Aussie cake"? Although if so, most online sources equate that with the Lamington, which doesn't sound quite like what you describe. But there could be some other Australian cake that a member of your family came across and started calling "Aussie cake"...

derrr. didn't think of the different spelling.

In actual fact I've just got hold of my mum and she's given me the recipe. It's also known as matilda cake apparently. and you're right - it's not like lamingtons.

it's really really lovely (and ridiculously easy).

Could you post recipe, hatwoman?
It sounds strangely delicious...

melt:

6 oz butter
4 oz sugar
1 tablespoon golden syrup

then stir in:

6 oz dried fruit (my mum includes glace cherries which do go well)
10-11 oz self-raising flour

press into a greased tin, sprinkle lightly with demerara sugar, cook for approx 30 mins at gas mark 3.

I would guess you should cut it into squares while still warm.

Sounds like an Australian fruit cake. I've seen them in Tescos at Christmas.
