bought plain haddock fillets today at supermarket. What to do with them?

They were in the sin bin (section where food is sold off cheap on it's sell-by date).

Dh and I eat dinner on our own on Fridays, aftert his karate lesson.

So please, a nice way to cook haddock fillets (not just with chips).

We have them very often - the cheap ones. I place them in foil parcels, put a bit of olive oil, lemon and herbs and bake. We lived 25 years in uk but we still dont like chips so we serve them with boiled baby potatoes, red pepper, red onion, carrots and brocoli or peas all together mixed in a huge bowl with olive oil, lemon and herbs - yes there is a pattern here

ooh I made something nice last night, with haddock fillets, though had it with chips.
You just grate 125ml worth of cheese and make 150ml worth of breadcrumbs. Add some dried basil, nutmeg, salt and pepper and mix together. You then put a layer with half of the breadcrumb mix into the bottom of the baking tray, put the haddock on top, squeeze some lemon or lime juice over the top then add the rest of the breadcrumb mix. Then you bake it for about 25 mins in the oven on about 200 degrees. Really yummy!
