My fudge went chewy, Why????????????

I made clotted cream fudge for the first time the other day. It said to heat it to a certain temp but I didn't have a thermometre so I just guessed. I beated it as the recipe said then put it in the tin to set.

The problem is, it has gone half fudge texture and half toffee texture. It tastes lovely but i'm not sure what went wrong...

I'm thinking either it was too hot, too cold or I didn't beat it enough. Any ideas?

I have a thermometer and the one time I ignored it the fudge I was making didn't set, so my guess is that yours just wasn't the right temp, prob not hot enough. I got mine in a department store.

if it's toffee-ey i'd imagine it was too hot

too long (ie too hot).
You need to do the test where you drop a small amount into a glass of cold water - for fudge you want a soft ball. Toffee gives a hard ball.

Ah so we're guessing it's to do with the temp rather than the beating. Must get a thermometre then! Thanks ladies

Ahhhh x-posts chasingsquirrels, thanks for that, will try it. I did suspect it was too hot as ds ran off and was up to mischief in the lounge and I wasn't watching it. At leat i'll know for next time.
