Nigella banana muffin fiasco

Got How to be a Dom Goddess and settled down to make her banana muffins but they were a disaster. Re-read the recipe and noticed there is definitely no extra liquid (ie milk or buttermilk) alongside the ripe bananas, so was this a mis-print? Has anyone successfully tweaked the recipe, or is it down to me - surely not!

I know this is an ancient zombie thread but I have just made bloody Nigella's sodding banana muffins and they were a disaster. I used the recipe from Domestic Goddess. I think she forgot to add the egg or extra milk. They're like the ghastly puddings they used to do at Cranks in the 1970s, all low sugar and carob. Be warned!

I made those muffins. They were vile. I crossed out the recipe in the book just to remind myself to NEVER make them again.

Oh bum. Just realised zombie thread.

I thought I would google Nigella's Banana Muffin recipe from her domestic goddess book out of interest in case anyone else had thought the same about this recipe disaster and wa-lah!

I was surprised to see no eggs or milk in the recipe but battled on. It wasn't until I went to mix the dry and wet ingredients that I realised the mixture was SO dry. It said don't overmix, so I clearly didn't do this, but trying to get the mixture into a sludge was impossible!

I feel cheated out of all of the ingredients and my precious time, as with a 17 month old, baking time is few and far between especially when I work full-time! Sigh! Back to my trusted NZ Edmonds cookbook, I wish I hadn't misplaced it this evening and reverted to something else.

I attempted banana muffins once (not Nigella's I dont think) and they were terrible.

I've concluded that I wouldn't put bananas in anything other than a banana loaf type of thing which can hide the awful truth about the appearance of the cooked banana.

Muffins are too pale to hide the fact that cooked bananas are grey, soggy are rather unappealing.
