Im cooking duck tonight and found a recipe that sounds great.

It contains the following

Beurre manie made with 25 g (1 oz) butter mixed with 2 tbsp flour

and

1 bouquet garni

I realise I may sound ignorant, but I have no idea what these ingrediants are and don't want to miss them out in case it mucks the whole thing up!

Help!

bouquet garni is sage, rosemary, parsley and bay tied togather in a little bunch...pass on the other, i'm afraid

A bouquet garni is mixed herbs basically in a muslin sack ..so if you have any fresh herbs you could do a DIY job - or just bung in some mixed herbs and you will have a few bits in the sauce !!!

Beurre manie is like a Roux I think.

Bouquet garnie is a bundle of herbs which you take out before serving. I think you can get little teabag style bouquet garni from the herb and spice section in Tesco's.

Thanks, I thought it may be that (honestly), have plenty mixed herbs.

Am thinking the other this is like a rowe (sp) to thicken the sauce at the end?

the beurre thingybob is just a butter sauce/roux type thing.. made with the butter and flour. you melt the butter and whisk the flour in quickly, i think, so no lumps

you can buy a ready made bouquet garni in shops and delis, it's a little tied together bundle of herbs

you could prob miss out the bouquet garni, but the other thing will be a base for something, so is probably necessary

Beurre maine is for thickening. I would be tempted to bung a bit of cornflour paste in}
