Just wilt it down like spinach.I'm off to pick nettles today for same reason.

wild garlic is soooo delicious. I can smell some at the bottom of my Mum's road but I can't see it

This is what I would do with it: prepare leaves as moondog described, fry some finely chopped chillies in butter (mix in a bit of olive oil to stop it burning), toss wilted leaves in buttery mixtures, pour on top of pasta, top with parmesan.

I use it instead of leeks in leek and potato soup, DD who is 8months loves it. I also use it in stir frys.

Also when the bulbs are more mature they are great roasted.

the flowers are great in salads especially later in the season when they have a stronger flavour.

When it's wilted, does it have that sharp raw garlic taste which it does when fresh?

And then i saw bunches of it at the farmers market for £1.50 a time Flippin eck, at that rate there was about 10 grandsworth in the park near us.

Also, add liberally to sausagemeat and use to stuff chicken breasts, then wrap in bacon and roast - delicious!

Oh I lurve wild garlic but none growing wild near me Fortunately I got hold of some bulbs last year and have a small plant growing in my garden now but too small to pick this year, will have to wait til next spring.

I'm surprised you think it's raw and sharp though, imho it's got a mild buttery taste even when raw.

it tastes of garlic but not as much as garlic does (picked a load when we were walking dog in the woods a week ago and as i wasnt sure how to use it just chopped into anything where i'd normally use garlic or spinach). most successful was in a stirfry, with lots of chilli and ginger and leftover roast pork, and in a risotto with lots of spring veg
does anyone have a soup recipe? was thinking that'd be good
