REcipe calls for 3 medium eggs but I only have large - what should I do?

Should I just use two large eggs instead? Or try and use a little bit of a third egg? It's a cake.

Basically, a sponge cake should have equal weights of egg, flour, butter and sugar. The usual recipe would have 2oz of flour for each egg, but if you weigh a large egg, it is usually more than 2oz. So if you weigh your 2 large eggs and they come to 5oz, I would say use them and add a bit of milk if you feel extra moisture is needed.

(All of the above assumes there are 6oz of the other ingredients.)

If your eggs are not that heavy, you may need to go out and buy another one.

OK well, in that case, (and bearing in mind I have never used a cake mix) what I would do is as I said earlier: use the 2 eggs and make up the fluid with a bit of milk. The worst that can happen is that the cake will be a bit heavy (but aren't all cake mix recipes anyway?)
