low fat baking recipes please!

Hi folks,

Am fat but love cake....
Have been very good so far but craaaaave bisuits and cake. Its the texture I think!

I would appreciate if any of you know any lower fat/lower sugar recipes for the following:

biscuits [ginger?]
cake [craving victoria sponge......]
ideas for stuff to put in middle of cakes.

I haven't tried it myself but I have an american baking book (for allergy sufferers) which says to cut the fat content you can replace butter with applesauce in just about any recipe. It is in cup measures (being american!) but suggests 1 cup of marg or butter = 3/4 to 1 cup of applesauce depending on how moist you want cake to be. As I say I've not tried it myself but it is maybe worth a go.

These Oaty Cookies are nice and sort of "healthy". I dont always put full amount of spread in and they come out just fine

Been thinking about Victoria Sponge and cant think of any alternatives at the moment. I think it needs all that butter to taste so good

I have a weight watchers one for a fruity tea loaf thing. You soak the fruit in tea overnight then add eggs and flour. No fat. I'll look it up for you when I get in tonight if you like, unless google can find it in the meantime. It's very nice.

Oh, I have a recipe for that

FRUIT TEA LOAF

225g raisins
225g currants
225g sultanas
225g light brown sugar
275ml hot tea
1 large egg
450g s/r flour

Put fruit in bowl and cover with hot tea with the sugar dissolved in it. Do this the night before so the fruit absorbs the sweet tea.
The next day add the beaten egg to the mixture then sift in the flour and mix well.
Put into 2lb loaf tin (or 2 1lb tins and you could freeze one).
Put into oven for 1 1/4 to 1 1/2 hrs at 170/325/gas3.

This is really moist and yummy!
