What to do with Falafels, i.e. some type of 'sauce' dish?

Planning on doing falafels with cous cous for dinner but what do you do with them to stop it being such a dry meal?

I usually do my falafels in pitta bread with salad and a sauce, not sure if that's what you're after. A cous cous salad on the side would definitely work though.

For my sauce I just use plain yogurt, mint (fresh is best but re-hydrated dried is fine), crushed garlic, and plenty of salt and pepper. Ideally it needs to stand for an hour or two before serving.

Tahina sauce - Mix tahina, lemon juice, garlic, chopped parsley, and salt. Then add water to thin down to a consistency you like.
Also, serve with a salad made of chopped tomatoes and cucumber, and maybe more parsley.

Not strictly a sauce, but I often do roasted cherry tomatoes, peppers, red onion, with bit of garlic, olive oil, lemon to stop falafel and cous cous being a bit dry.

If you have it with tabbouleh instead of cous cous, it's a bit more moist and mint sauce (yoghurt-based like you do it) is great with that as the mint in the tabbouleh heightens the fresh taste

Think I might do the roasted veg idea as I have the ingredients for that except the lemon juice.
