using the chicken carcass

We had roast chicken for dinner and I would like to do 'something' with the carcass. Do I just put it in water on the hob and cook it gently to make sock for a soup base?
Anything else?

Basically, yes.

Put it in cold water and boil it up. Remove any scum from the water after a few minutes. Then add a quartered onion, some root vegetables, peppercorns and any stalks of herbs you have lying around.

Let it simmer for about an hour, then remove the carcass and dispose.

Reduce the liquid by continuing to heat, until you get a tasty stock. Season to taste.

you'll also need bayleafs (about 3 or so for a big carcass), peppercorns, celery or half an onion, and a carrot. Some herbs if you fancy them.

Veg only needs to be roughly chopped as will be taken out once cooked.
