make your own kfc???

hi, my teenage brothers are staying with me and when i asked what they wanted for dinner they said kfc. weith the amount they eat i not going to go to kfc and spend a fourtune partucularly as i have chips, chicken, rolls, beans, coleslaw and corn on the cob. but does anyone know how the chicken is made? is it made with bread crumbs or is it made with flower and do they use oil or any thing to make it stick??
any help would be much appreciated. thanks

I would guess that the chicken is dipped in egg and then into seasoned flour.

I would season the flour with salt and pepper (plenty of it), along with some paprika and a little cayenne. Possibly some mixed herbs or oregano or thyme. Then deep fry the chicken.

I mix paprika, tiny bit of chilli powder, black pepper and any other herbs/spices to hand with some flour in a food bag. chuck in the chicken and give it a good shake. Bake with a little oil in the oven until brown and crispy.

i mkae chicken nuggets for my kids but i've made bigger chicken fillets for myself too! i roll the chicken in melted butter then put it in a mix if breadcrumbs and grated cheese. i put the little ones in the oven for about 15 mins and the bigger fillets for about 25 mins!
my kids are rubbish at eating chicken any other way but fight over these! and i steal a few when they're cooked too - they are delicious!

I make coating mine with flour and Tesco Cajun spice mix.

4 tblspn plain flour mixed with the spice mix. If you don't have time to get to the shop you could improvise with garlic, salt, pepper, cayenne pepper. Basically whatever spices you have in. I guess the mix is about 50-75g.
Lightly flour each piece of chicken, dip in egg then redip in your flour mix.
Place pieces on a baking tray and drizzle lightly with oil.
Cook for about 35-40 mins at about 200 degrees.

Can be eaten cold the next day.
If you wanted it crispy without the oil I guess you could mix the spices with breadcrumbs. Coat in flour, dip in egg then coat with breadcrumbs.

I have a recipe from the US - soak your chicken in buttermilk overnight if you can, if not for about half an hour, then drain, and in a plastic bag mix a cup of plain flour, 2 tsps of paprika, cayenne powder to your personal taste, salt, pepper, and some oregano, then shake the chicken in the bag till coated.

Then fry the chicken - healthy as it sounds, you're actually better frying it in dripping or suet as the coating seems to come off in oil.

Cook it on a moderate heat so it cooks through.

We use this recipe all the time and it's calorific but yum if you're in the mood.

i know i'm not going to get it perfect, but i dont want to pay for kfc for 6 (a box meal each because the buckets arent filling enough) when i have all the basic ingredieants here!
canella i like the sound of the cheesey one, i think i'm going to have to try that one!

Don't blame you for not wanting to fork out.

It's delicious and I can get quite greedy on it so I'm sure teenage boys could eat even more. . It's expensive too.

thanks all, i did the cheesey one from canella and it went down a treat. i did a mixture of nuggets and 'burgurs' and they loved it.

I know it is too late now but, for next time, Nigella has a recipe for southern fried chicken and she suggests getting some Ritz crackers, bashing them in a bag, coating chicken peices in flour, then egg, then the ritz cracker crumbs, then frying.

They are tasty, but very lardy!

sounds delicious! used to love kfc but won't eat battery chook now and also too bloody expensive. Tried a Nigella recipe where she poaches the chook in milk first then coat in highly sesoned flour and egg. Was good texture but not enough oomph so would go with more paprika next time.

Can you shallow fry the outside of teh chicken then oven bake? I don't have a deep fat fryer.

I'm going to try one of these recipes this week, they look great.
I'll bake it though, fried is a bit greasy for us and it makes a mess.

I've used a Mary Berry recipe many times, It's Amerian fried chicken.
Soak in buttermilk, then dip in flour with cayenne pepper, paprika, pinch of nutmeg, garlic, salt and deep fry.
It's very tasty, I'm sure if you google you'll find it.

To make it taste like KFC, I think you'd need to deep fry it. You'd probably need a triple coating twice as well eg seasoned flour first, then egg, then breadcrumb/panko seasoned mix.
