I'm after some yummy, not too cheesy/creamy veggie recipes for family dinners.

Trying to be healthier and save money (can't afford all this organic meat I seem to spend a fortune on every week).

So far, my veggie 'repertoire' consists of chickpea tagine, a few pasta dishes and veggie stirfry.

I'd love some tried-and-tested veggie indian/Thai curry recipes, and anything else you think is tasty (and not too complicated).

Quorn chilli is a favourite here.

Fry some chopped onion/garlic in oil with some chilli flakes, add some Quorn mince, then a tin of chopped tomatoes, a slosh of red wine, some tomato puree and chilli powder/cumin to taste, and kidney beans. Simmer for 20 mins then eat. Simples!

Are you ready for a peasant dish?

This is my on the Bread Line recipe:

Chop an onion and fry with some chopped garlic. Add a couple of diced carrots, fry off for a few minutes. Add some curry powder and tumeric. Add some red lentils. Pour over enough veg stock to cover, bring to the boil then simmer for 20 mins or so. You may need to add a bit more stock from time to time to stop it drying out

Serve with rice or naan bread. Cheap as chips

notnowbernard - I love lentils, but am not confident cooking them. This sounds nice and easy, though, so will give it a go. Maybe tonight, actually

It's tasty and you can adjust the spicing to suit your palate (sp?)

If I use mild curry powder my dds eat it and enjoy it (and they are 5 and 2)

Give the lentils and rest of mixture a stir for a couple of minutes before you add the stock

It should be like a dahl consistency at the end. Enjoy

I do green or brown lentils in a simple tomatoey veg sauce - chop an onion and a couple of cloves of garlic and fry gently until a little soft. Add finely chopped carrots, leeks and celery. Stir and fry until the veg is all soft and the onions have browned a little. Add a few chopped tomatoes, turn the heat up a bit. and let them get mushy. Add green or brown lentils and plenty of stock or water and a bayleaf. You can also add a slosh of sherry/wine if you like it. Bring to the boil and boil fairly fast for ten minutes, then simmer until the lentils are done, about 35 minutes.

If you're not actually veggie, just want to use less meat, a couple of rashers of bacon chopped and fried with the veg gives a nice taste. A small teaspoonful of smoked paprika put in at the end of the frying stage is also tasty.

This is great served with rice or just bread and butter and salad and children seem to love it.

There are some lovely veggie recipes atwww.viva.org.uk/roadshows09/veggieshowtalks.html I went to the Incredible Veggie show at the weekend to help on a stall and the food at the cookery demonstrations was wonderful - the main Viva site has a family 7 day menu too.

Chinese-style rice? Boil some rice, stir-fry a few veg in soy sauce, add the rice and crack an egg into it, mix furiously - voila, one special egg fried rice!

Also Italian-style bean stew is a favourite of mine - just fry some onion and garlic, chuck in some tinned toms/passata, tins of beans (cannellini or butter beans), plus any other veg you have hanging around, chuck in a bit of stock powder and some oregano and red wine and simmer down for a bit. Serve with bread and butter and lots of parmesan!

make friends with tomatoes. Roasted tomatoes can be used in a million ways - I roast them and then mix with pesto and chunks of avo on pasta. Or roast with balsamic vinegar, herbs, chilli and olive oil and just serve as is with spaghetti and parmesan. Or Roast with olive oil and red peppers, and mash it up with stock for soup.

Roasted garlic with houmous, salad and pitas is delicious and light.

Any veggie risottos are easy and delicious.

Baked butternut stuffed with corn, rice, cheese (ricotta/parmesan).

Soup, obviously.
