My partner and I love food but have decided that we must become healthier and slimmer and... yada yada yada you've heard it all before. Our basic plan is to cut right down on fats, sugar etc and eat smaller portions during the working week, while allowing ourselves carte blanche at weekends, so we don't plunge into depression. Anyone got any genuinely tasty but not too fattening recipes? Very thankful for any yummy weekday suggestions you may have.

Heres a site you might find interesting.

Dh and I (me especially) are in the same boat, this site has been in my favourites since I don't know when, this is the first time I've looked, no surprises I keep losing half a stone and putting it back on!!! (need to lose 1 1/2 stone to be happier with myself - I'm alright til I look in the mirror)

My absolute must is sugar free jelly - about 2 calories per packet!!! And very very yummy! Also, pasta dishes with tomato/basil sauces instead of creamy sauces.

Scummy, I have a total STACK of recipes which fit the bill!
My basic low fat tasty "pie" is not so much a recipe but a bung it all in as follows....

This is for two greedy people.

You basically need plenty of veg.... 3 big portions of low carb veg such as mushrooms, leeks, (sliced thinly), carrots,(diced finely) onions, broccoli, green beans, cauliflower, turnip....

cook the veg in about a half cup of stock ( I use Marigold vegetable bullion as it is very tasty, if a little salty) for about 5 minutes.

Put the veg in an ovenproof dish ; "fry" in a little more stock a smallish portion of either chicken, fish,Turkey or bacon. ( I use only one chicken breast between two as the veg pads it out so much. ) Even cheap wafer thin ham works quite well .

Add this to the veg in the dish , then make the sauce in the same pan using the sticky veg/ chicken/fish juices as follows.

Add half a pint of milk to the pan but reserve a small dribble into which you mix a rounded desertspoon of cornflour. Add the cornflour/ milk to the milk in the pan and bring to the boil to make what is basically a fat free white sauce. Cook for a few minutes. I often add a tablespoon of dried parsley/ mixed herbs at this stage.

Pour the sauce over the other stuff in the dish.

For the topping , take one large( or two small) potato and chop into short "matchsticks." ( first slice in half lengthwise; the rest is easy) then sprinkle over the dish.

Cook in a hot oven for about 45 - 60 minutes till the tatties are brown and bubbling.

It is best left to stand for 15 mins before eating.

You can make lots of permutations of the above using different veg/ meat. It is deliciously filling, and makes a huge quantity.

There is plenty in this amount to feed one small ( not too fussy !) child.

If you can't be arsed making a white sauce, use a tin of Campbell's condensed low fat chicken soup.

Further to Musica's suggestion of pasta, oven roast three peppers (any colour) with a couple of onions and a carrot and a courgette/onion or two if you have them to hand, combine with a small portion of pasta per person mixed with a tablespoon each of pesto and tomato puree.

Again, this gives a massive and filling portion for very few calories.

My current favourite is this soup:
cube a potato and bring to boil, add veg stock cube, simmer @ 10 mins, add lots of broclooi spears and cook till tender. Liquidise and add a big spoonful of horseradish sauce. The horseradish gives it a real kick. You can add a bit of low fat creme fraiche of you want but it isnt necessary.

my favourite is Tuna steak grilled placed ontop of Sweet Potato mash, just boil or steam sweet pots then mash with pepper and lime juice. Pile it up, place the Tuna on top and squeeze alittle more lime on , add some freshly ground black pepper and any veg you like (I always have peas) and there you have it really really tasty.

I also make up a HUGE fruit salad with Mango, pineapple, apple, lychees, pear and banana or whatever else you like and pick at it throughout the day when I am hungry.

good luck

Hi, I've been trying having a big bowl of cereal on some evenings and it seems to work - makes you feel full but not bloated and you wake up in the morning with a lovely empty feeling ready for breakfast!

badmamma · 28/04/2003 19:01

Jasper that sounds utterly disgusting

Lindy · 28/04/2003 21:15

I make a sort of low fat vegetable biryani which is delicious - dry fry an onion & some mushrooms in a little stock & curry powder - add 2oz rice (this is for one greedy person) - then throw on more stock & loads of veg (frozen is fine) & cook approx 15 mins - actually it now sounds rather boring but I can assure you it is really delicious; serve with some low fat natural yogurt (also throw in some chopped apricts & raisins).

One level table spoon oil
One teaspoon mustard seeds - heat until popped
add 1 tsp curry powder,
" cumin
" coriander ( powder)
mix into oil.
Add 1 tin of tomatoes - liquidised preferably then throw in mixed veg - my fav is aubergines, courgettes, peppers and some sweet potato.
cook till soft
I add some mixed beans ( mixed tin of cannelini/kidney etc from tesco) at the end but this isn't obligatory.
serves loads so the table sppon of oil is actually very little per serving.
V tasty, healthy and filling!
( but isn't workig for me at the moment as am obsessed with Double deckers ( chocolate not the big buses!))

BigBird · 29/04/2003 13:02

Chicken brests diced & browned, garlic, tin chick peas, tin tomatoes, 1 veg stock cube with water, all in a pot with pasta shells and simmer for about 30 mins. Add tobasco, herbs, etc to taste.

Why don't you buy a Weightwatchers recipe book? You don't have to be a memeber to buy them, the food is fantastic and you can do what you want to over the weekend. Good luck. (PS visit the website for ordering if you are interested: www.weightwatchers.co.uk)
