Kikkoman soy sauce drought

I love this stuff - not the low-salt version - but Sainsbury's and the Co-op seem to have stopped stocking it. Where else can I get it other than trekking up to large Asian shop the other side of town from me? (my town is Cambridge)

Yes, 'tis good stuff. Better than the Chinese varieties.

We buy a giant bottle that keeps in the fridge from a local shop - tis really cheap. Do that and you will only have to trek to the other side of town about once a year

Keep one of your empty little bottles from the supermarket though as the big bottle doesn't look that good on the table.

You don't need to keep soy sauce in the fridge.

The big bottle you do - it says so on the label and everything. I have often questioned DH about the reasoning behind it.

Hmm. It's not necessary, but apparently it stops it from losing its flavour so quickly.

"For the freshest tasting sauce, we recommend using Kikkoman Soy Sauce within three to six months after opening. The sauce is still safe to use beyond this time but the quality may not be at its best. Once opened, the freshness and flavor of the sauce will slowly deteriorate. Therefore, we also recommend refrigerating the soy sauce after opening. Refrigeration helps the flavor and quality characteristics remain at their peak for a longer period. In addition, our soy sauce will not spoil if it is not refrigerated but its quality will decline faster.
A fresh bottle of Kikkoman Soy Sauce should have a piquant flavor and reddish-brown color. When opened and exposed to air, naturally brewed soy sauce will darken and become stronger in flavor and aroma over time. This is the result of oxidation. Although this is not harmful in any way, it will cause the quality to decline. With an older bottle, the sauce may appear darker in color and have a strong, heavier taste. We believe the flavor of our soy sauce is at its peak when the bottle is first opened"

A big bottle of sweet soy sauce we lost its flavour and we binned it. That was perhaps because we didn't put the lid on properly though. Haven't had it happen since though, but haven't bought that style of lid again.

I think it says it is good for 12 months on the bottle (please don't make me confirm that). Ours never last that long anyway as we use so much.

tbh I'd never throw away something that has that long a date on it.
