Anyone know something interesting to do with leftover roast pork?

I usually just bung it in a casserole or stir fry it but am bored of those options so want something new and exciting to do please!

Fry some onions, ginger and garlic with some red capsicums in a pan slowly.

Then add a can of pineapple chunks and a chicken stock cube. Reduce so the sauce is not too liquidy.

Slice the pork and add to the pan. Throw in some fresh chopped coriander and serve on a bed of rice. yum.

or slice into really thin julienne type strips, lay on a baking sheet and put in the oven for 10 minutes.

Then treat the pork like the duck in crispy duck with pancakes (ie. serve with chinese pancakes, chopped cucumber and spring onion and hoi sin sauce.

Or buy some tortillas,some fajita spice mix. and sour cream and or guacamole Stir fry peppers and onions with spices and allow people to make their own fajitas.

We had crispy duck on Tues and were at a mexican restaurant on monday so don't really want to do tortillas or pancakes, will save them for another time!

Mankymummy is your first one like sweet and sour?

Shred the pork and put small amounts in large bowls.
Add any or none of spring onion/red peppers/mushroom/corriander leaves.
Cook some 4 minute noodles and divide amongst the bowls.
Make a broth by putting some water on to boil in a saucepan. Add some chicken stock (I sometimes use miso instead), some soy sauce and chillis/lemongrass/corriander stalks/crushed garlic.
Get the broth on a rolling boil and add some lime juice at the last minute. you are looking for a hot and sour taste.
Ladel the broth over the noodles and pork.

I shred mine, stick it in with shredded veg, stir fry with garlic and soy sauce and have with noodles.

in fact, I enjoy that more than roast pork

yes it is a bit like sweet and sour but not so gluey. you can add chilli too if you like...

Ah well thanks for all of these. DH sent me a text earlier though asking me to please make 'the chilli bean thing' with it so that's what I'm doing.

Pork cubes
Tin of tomatoes
Some beans (I'll be using a tin of black eye beans today)
Onion
Garlic
Chilli
Herbs
Water/stock if it is too thick (depends on the tomatoes)

But I've written yours down for future reference (apart from trixy and Psycho's-I think I can remember those on my own )and will use next time (or maybe even tomorrow as it's quite a huge piece of pork!)
