This is a Jamie Oliver one and we all loved them.

12 Jacobs cream crackers
8 sprigs parsley (finely chopped)
2 heaped tspns Dijon mustard
1 large egg pinch of salt and pepper
olive oil

Wrap crackers in teatowel and smash up until fine.

Mix everything in bowl. Divide into 6 patties. Drizzle olive oil over them. Cover on a plate and stick in fridge until needed.

Grill or fry 3-4 mins each side.

Serve in toasted buns with whatever salad/sauce you like. Voila!!!!

Nigella does a nice one with garlic, dried mint, dried oregano bulgar wheat and lemon zest. Mix together and make little patties which you dry-fry and put in toasted pittas with hummus and yoghurt and salad.

Yummy!

If you're interested, I'll get the book out and give you the quantities.

I found this recipe in a weightwatchers supplement that came free with a magazine.

It's one of my Dc's favourite dinners.

1lb of minced lamb
1 garlic clove finely chopped
1 onion finely sliced
handful of mint leaves finely chopped.
salt and pepper

gently fry the onion and garlic for a few minutes till soft then add to a large mixing bowl with the mince and mint.

Season well then mix it altogether with your hands. I 'squish' the mix together really well for a good few minutes then shape them into burgers.

Place the burgers on a plate/tray and place in the fridge for 10-15 mins to chill.

I then gently fry them in a little olive oil until cooked.

I serve them with wraps, salad and jacket potato wedges.

I also serve a salsa with them which is just small cubed cucumber, small cubed apple, small cubed pepper, cubed cherry tomatoes and finely chopped fresh mint.

I find if you really press (squish) the meat really well you don't need to use breadcrumbs or eggs to bind the burgers together- which in our house is good as Dp has a gluten allergy.

Shepherds pie for the kids?

Fry 500 g mince with 3 shredded carrots (pour off fat if it is very oily).

Crumble in an Oxo cube or Knor Lamb Stock cube, some garlic puree, tin of tomatoes, black pepper.

Simmer for 10 mins giving an occassional stir and add a little water if it gets dry but do not make it runny.

Put in casserole dish and spread mash potato on top. Mt layer and potatoe layer shuould be about 3 cm thick. Cook to brown of the top at 200 F for about 20 mins.

Will freeze if any left over. I keep it in in the freezer for emergency kids meals. It is quick to microwave but do make sure it is piping hot and left to cool before serving. Can be served with salad or even a few frozen peas boiled up on the stove.

I like it with some Parmesan cheese sprinkled on top about 5 minutes before I finally take it out of oven but kids do not like the strong flavour so I miss it out for them.

The amounts above would make about 8 small kids meals.

Sorry - that is cook on 200 C not 200 F

DH made cracking ones for the BBQ over Easter.

Lamb mince
1 beaten egg
Seasoning
Crumbled feta cheese
Chopped sundried tomatoes that had been steeped in ev olive oil

Sensational

I have recommended this one before but Lamb Mince is great in Lamb Keema which you can make mild or strong depending on curry paste used.

My dc love it but the addition of the coconut milk makes it lovely and creamy.

Curiousmama · 14/04/2009 17:18

StirlingTheStrong I was trying to think of keema and couldn't remember the name. Going to check your link.

Curiousmama · 14/04/2009 17:20

Mmmm sounds yummy I think I'll make that for dinner tomorrow night, cheers Stirling.

Thanks curiousmama - I found that recipe a few months ago and it is now a regular meal in our house - the dc even clear their plates! And it is quite cheap!

Curiousmama · 14/04/2009 17:25
