Buggar - will this cream I have frozen be no good to cook with?

Bought a pot of double cream to make carbonara with last week, didn't use it and it said can be frozen so dutifully chucked it in freezer.

Having Carbonara tonight and just took it out to defrost and noticed that the carton actually said okay to freeze if whipped first- doh!

Wll it go all funny if I try and use it in a carbonara sauce?

Shud I just wander off to shops to buy another or hope for the best??

I have frozen cream without whipping it first... though I have never used it as whipping cream afterwards..I have always used it in a hot choc sauce or such. I find its texture does change and possibly that is why it says do not freeze without whipping first, may not be suitable for whipping after being frozen. so I would think to use it in a carbonara would be ok as it is heated. WOuld be interested to know if it is ok..I think it will be fine ..my choc sauces suffer nothing from using Frozen cream.

It will be fine in a sauce.

I do the same and don't have any major problems although like cosit says the consistency does change a bit (it's less thick). I use it straight from the freezer though.

Ta! Things is I'm doing the carbonara sauce Jamie Oliver style - i.e - not cooking the sauce, just adding the sauce to hot pasta as he says that should cook the eggs okay.

Do you still think it will be fine?

Soz if I am being a PITA!

Ah... Don't know but I would give it a try anyway (maybe use a bit less cream than the recipe says?)

I think I would heat it up then anyway..even if Jamie says no.wont do any harm i should think. Then just pour over it..I think it looks a bit seperated and grainy when defrosted and may be a bit funny looking sitting over pasta.

Why don't you beat the eggs and then beat the (defrosted) cream into that?

Am gonna give it a go. Just beating the eggs, cheese and defrosted cream together and then stirring into the hot pasta. Will let you know if its a disaster!
