How do you peel and prepare it? Never prepared one myself before. Thanks!

I peel as would a parsnip or potato then chop into chunks and roast.

I often cut in half, remove seeds and then roast for an hour or 2 and then use the soft flesh scooper out of the shell as a mash, or soup.
Or peel using a peeler as that skin is hard hard and roast as Mrs W suggests

OHHHHHHHH it makes the most divine risotto!! Peel it with a potato peeler, and cut into chunks about 4cm sq, then coat in olive oil and roast till soft in the oven. (20 minutes)Meanwhile, make a risotto. Just before you serv it, stir in half the butternut, smushing and crushing it into the rice. Add your parmasan and butter,and the rest of the squash. Serve.

I second Luxmum; butternut squash makes one of the nicest risottos I've ever had. Adding a bit of fresh sage really complements it.

It also makes astonishingly good soup. Boiled with fried onions some cumin and coriander and a sweet potatoe then some milk at the end is delicious.

ROasted is delicious and can be done with the skin on - you can eat the skin, but most people prefer not to.

Or poke a few holes in it with a skewer, bake for an hour or more and then stuff with ricotta, chopped sage and some parmesan cheese. You can mix in some couscous or rice if you want too.

Jamie O bakes it with coriander seeds, dried oregano, fennel seeds, dried chilli, crushed garlic and salt and pepper. 'Tis marvellous.
