Bero recipe - melting moments

Me and dd have decided to make melting moment biscuits from the Be-Ro book. However the recipe requires lard - we have none. Anyone know if its possible to use sunflower oil instead? Trying to avoid a trip to the C0-0p!

Don't use oil, just substitute margarine (Flora etc) instead. Presume you have this recipe.

Yes Lilymaid thats the one. So I just use 4oz margarine instead of 2.5oz marg and 1.5oz lard?

Yes, do that 40z margarine - if you happened to have something like Flora White you could use that instead of the lard, but I don't think you'd get a good result if you used oil.

I have made these ones and they were really nice. Didn't make the filling though, just melted some chocolate and half coated them.

150g (5oz) Self Raising Flour
85g (3oz) Caster Sugar
65g (2.5oz) Margarine
40g (1.5oz) Lard
½ Egg, size 3
1tsp Vanilla Essence
Oats or Desiccated Coconut
Glace Cherries

Pre-heat oven to 180°C: 350°F: Gas 4
Grease two baking trays
Cream the margarine, lard and the sugar until light and fluffy.
Beat in the egg and vanilla essence.
Stir in the sifted flour, mixing well.
Roll into walnut sized balls and toss in rolled oats or desiccated coconut
Place onto baking trays, flattening slightly, placing half a cherry on top of each biscuit.
Bake for 10 to 15 minutes.
Turn out on to a wire rack to cool.
Makes approximately 30

OMG the bero cookbook was the one we followed in cookery classes at school (am 37). Is it still available?

I love my Bero cookbook, every generation of daughters in my family have had one since my great-grandmothers' time. I am now teaching my boys to cook with it.

The Bero website has most (if not all of the recipes on it). I picked up my copy in the bakig section of Morrissons a few years back.
