Any ideas for left over mashed potatoe??

I always cook too much and end up throwing them away, has anyone got any ideas of what to use them for? I would prefer something quick and easy to make if possible.

What about some Fish Cakes using tinned salmon or tuna?

You could always make a few and freeze them

You can freeze mash as it is -- lovely reheated with baked beans and cheese!

Mix it in with a tin of tuna, a bit of onion, and maybe an egg. Then flatten into fishcakes, roll in flour and fry. You don't nees the hassle of breadcrumbs to make fish cakes.

or you could make potato scones I think

Mix the mash and cold/leftover veg ie carrots, cabbage into small "cakes" and then fry them in a pan to warm them.

How do you make too much mash?

I like the idea of leftover mash but have no idea how to achieve it.

You obviously don't have teenage girls then Trillian?

You make enough for the five of you and at least one of them will say 'Oh god, not MASH again' or 'For heavens sake, you KNOW I hate mash' or 'Yeurgh, that's gross, there's NO WAY I'm eating that'.
So you see you always have a portion left over

I always try and do twice as much then freeze half in an ovenproof dish so I can whip it out the freezer when needed and heat up in the oven, the top goes all brown and crispy, yum.

Never, ever, throw mash away

In the freezer at the mo I've got some mash mixed with sauteed onions and grated mature cheddar cheese

Loads of stuff you can do.

Never throw mash away. Just freeze it in sensible sized blocks then take out and microwave until piping hot. Add some butter and use as a quick addition to a 'sausage n beans' or 'fish finger n peas' type meal for kids.

I also mix it with all the left over veg from Sunday lunch and freeze. Then unfreeze the veg mix in the microwave, stir it all up and fry it up or bake with cheese on top in the oven and have with a meal during the week. Nice with fish.

Also I like to take it out and microwave until piping hot and mix with garlic and plenty of butter and a bit of parmesan cheese if have I am feeling a bit poorly and do not want to eat meat.

Frozen mash is nice to take out and add as thickener to soup too. If I have an old leek or a bit of brocolli or whatever going soggy in the back of the fridge I just boil the veg until soft in stock, blitz in a blender and then mix in the mash to thicken.

StirlingTheStrong - I like the fish cake idea. Might well try that.

some great ideas guys, I feel very guilty for throwing some away recently.

I love all the cheesy ideas, unfortuntly I have no chees in at the mo, but made a type of bubble and squaek but with different veg.

Another vote for fishcakes. Surprisingly delicious with tinned salmon, which I always think smells vile in the tin but is quite yummy mixed with a dash of ketchup and the mash and fried in butter. The dcs have it at least once a week, and dh sniffs hungrily round the kitchen...

Bubble and squeak is fried up leftovers - mainly potato but whatever leftover veg you have as well - fried up in a big mess together until it bubbles and squeaks and all goes into a lovely sort of hot squidgy stuff. It's yummy!

Mash with a bit of fried onion and grated cheese, roll into golf ball sized dollups - flatten with back of a spoon and freeze. When you need to cook, for toddlers add peas, carrots and sweetcorn to make a 'smiley face' and bake in oven for 15 mins or for adults fry for cheesy potatoe cakes!
