yawn...chicken breasts again! any exciting recipe suggestion?

i have 4 chicken breasts defrosting for tonights dinner (or tea as we call it up here in t'lovely north)

am running low on fresh veg but have a green pepper and can nip to shops on way home for anything else

have a bottle of white wine and all usual store cupboard stuff

can anyone share any lovely recipes with me please?

I really liked the inside out chicken kievs I did once - really easy. Just breadcrumbs and garlic butter on top. Not that exciting though.

POached in white wine with lemon/garlic/thyme/blackpepper is another one I like.

Tray bake - do in a tray with veg (pepper, cherry toms, courgettes, onions, olives - what ever you fancy) and bake/roast for 30 mins. With some thyme/garlic/little bit of chicken stock if you want some sauce.

Or slit chicken put a spoonful of pesto in, wrap in pancetta/ham/bacon and bake.

Sweet and Sour - you need tomato ketchup, muscavado sugar, vinegar, garlic and poss some pineapple and cashew nuts.

Rub with garam masala or curry powder or other spice mix.
Can cut into strips, and fry with spices and serve with salad, tortillas and tomato chutney or hot spicy tomato sauce and cheese.

Don't know the age of your family, but I made these last night for 5 and 3 yo DDs, and they went down a treat.

What's the weather like oop north? If it's springlike and sunny you could venture a salad? My favourite is to slice up the chicken into strips, then marinate these in some oil, garlic, dried herbs (thyme and oregano go well). Then stir fry the chicken. Serve on a bed of lettuce or mixed salad leaves, with whatever salad veg you like. I like sweetcorn, grated carrot, spring onion and maybe some cubed cheese as well. Delicious!

Bake them with a jar of Hoi Sin and a small carton of organge juice. Very yum (and easy).

thearmadillo your recipes are making me drool, i will save them for another day (when i have done some shopping!)

poledra they look great - so simple. i have a 4 year old dd, a 20 year old dsd and a 46 year old DH and they will all like the crisp chicken bites!

RC - i love thai green curry but dsd is so fussy. i think i will be safe tonight with the crispy chicken

I like the boring but tasty stuff them with ricotta or cream cheese and then wrap them in ham or bacon option.

( yes. I am a minimum preparation kind of gal)

Stealing from somebody on the slimming world thread but I tried this and it was yuumy:

Cut in half and put a clove of crushed garlic spread in the middle. Wrap whole breast in bacon and put it oven. Add cheese to the last 10 mins of cooking. Was very tasty.

For minimum prep: fry strips of chicken, mix into jar of pasta sauce, add cream cheese and ham, make into a pasta bake with grated cheese on top.

thanks for all recipe ideas - poledra i tried your suggestion and they were really easy and tasty - even thou they are just chicken nuggets really!

Dsd didnt turn up but im sure she wd like them, DD ate a few, i scoffed loads and DH didnt even comment but thats another story (sigh)

anyway i will try the other suggestions at later dates, i like the idea of tray bake, and the cheese/ham idea

God, yes, it's just chicken nuggets but at least this way, I know what's gone into them . DD2 took some persuading with them as they are green and she mistrusts anything green on priniciple but, once DH showed her they were, in fact, meat, she scoffed them.

So glad I've read this. Have chicken so often I get bored with my usual recipes adn stir fries.
