So many bananas. What can I do with them?

Due to an embarrassing online shopping mistake, where I meant to order 5 bananas but instead ordered 5 packs of 5, I'm a bit over run with bananas. Most are still pretty green at the mo, so at least they'll last a week or so. What on earth can I do with them? They don't freeze, do they?

They do freeze. Don't peel them. Just pop them in the freezer and then use them for baking.

you can also pop them straight from the freezer into a blender to make smoothies or milkshake.

'hot banana' is a huge fave in our house and takes 2 minutes. melt a bit of butter, chop bananas into rings, fry in butter until softened (I add a bit of cinnamon too), then squeeze an orange and pour over some of the jiuce, cook off for a minute until reduced and gooey. serve with ice cream or yogurt.

allow at least 1 banana and half an orange per serving. my kids absolutely gobble this.

should add- also works with boxed orange jiuce if you don't have any fresh oranges to hand.

Banofffee pie!

It's the greatest and over ripe bananas work best. Here's a very quick recipe taking all the short cuts but tasting just as good:

  1. Get lots of digestive bics to roughly line the base of a glass dish (no need to crush, too faffy)

2.Open can of ready made caramel or
heat dollop marg/butter with sugar (1:3) in large bowl in microwave until bubbling well (don't want it bubbling over)then stir in can of condensed milk until thickened.

  1. Slice as many bananas as you want roughly lengthways and place on top.
  1. Pour over caramel
  1. Boil milk. I use 2 pkts of the 7p quick custard from sains/tesco and add milk instead of water.
  1. Pour over and leave in fridge to set until needed.

Yummy! (even if it hasn't set!). My family loves this so much it always disappears no matter how much I make.

Hmm yummy. Choc/banana lollies... banoffee... all good. I'm glad I can freeze them. I'll chuck some in the freezer so.

Chicken Maryland in Jamies Dinners book (by yep you guessed it Jamie Oliver) is fantastic, Chicken breasts stuffed with bananas sounds vile but trust me it is lovely.

weebump - if you have frozen your bananas, be aware that they won't come out the same! The freezing breaks them down so they will be great for cooking/baking/making puddings with but not for eating like a normal raw banana.
