anyone know what to do with Quinoa?

MIL gave me a box of Quinoa and I haven't got a clue what to do with it. I just tried making some according to the directions on the box and it wasn't that great. Surely there's got to be a trick to it? Any suggestions?

lovely salad recipes -- I've just spent ten minutes hunting and can't find them.

here's one that I've tried which was really nice. Also very good the next day stuffed into pita with feta cheese and/ or hummous.

Warm Beetroot & Quinoa Tabbouleh
Serves 4

Preparation:15 minutes. Cooking:18 minutes plus 5 minutes standing

This is my favourite way to eat quinoa. The beetroot and the onions give a touch of sweetness which contrasts so well with the slight bitterness of the grain.

125g/4oz quinoa
2 tbsp olive oil
2 large red onions, finely sliced
2 tbsp balsamic vinegar
2 tbsp freshly-squeezed lemon juice
2 small raw beetroots, peeled and grated - about 200g/7oz
Handful flat-leaf parsley coarsely chopped
Salt and freshly ground black pepper

  1. Put the quinoa in a sieve and rinse thoroughly under the cold tap, then put into a saucepan with 300ml/½ pint water and bring to the boil.
  2. Cover and leave to cook slowly for 18 minutes.
  3. Remove from the heat and leave to stand, still lidded, for 5 minutes.
  4. Meanwhile, warm the olive oil in a roomy saucepan, put in the onions, stir to coat with the oil, then cover and leave to cook gently for 10 minutes, or until very tender.
  5. Stir the balsamic vinegar into the onion, let it bubble, then remove from the heat.
  6. Add the quinoa, lemon juice, beetroot, parsley and plenty of salt and freshly ground black pepper to taste.

I cook it in our slow cooker in stock (just use bouillon powder and water as per instructions on pack) with chunks of fresh beetroot and sweet potato (I use frozen) and when it's ready stir cubes of feta in, it's quite nice

my daughter makes a lovely orangey breakfast with it but don't know the recipe
