How do I make the best, classic, choc fridge cake?

I want that classic, goldern syrup and margarine flavour. Last time I made one, I used Sainsbury's cooking dark chocolate and it tasted of just that - was I using the wrong stuff?

Any thoughts welcome!!

4oz butter
3oz golden syrup
1oz cocoa powder
8oz digestive biscuits - crushed
2oz raisins
6oz milk chocolate

Heat the butter, syrup and cocoa powder and stir until melted. Mix in the biscuits and raisins, press the mixture into a 9" round tin. In a bowl melt the chocolate and spread over the cake. Chill.

You need milk chocolate - not dark

Oh hold on, mine is THE BUSINESS:

250g digestives, 75g raisins, 75g quartered glace cherries (the uncoloured dark ones are nice), 100g butter, 25g sugar, 3tbs cocoa, 4tbs golden syrup.

Break up the biscuits, add riasins and cherrries. Melt butter, sugar, cocoa and syrup, add to biscuits and pressinto 7" tin. Can pour melted choc n the top if you feel the urge. I usually add some coconut to this mixture and up the liquids a bit.

V poor for the thighs, v good for the mood.

That does sound good, Midnight - but DH (who loves fridge cake) hates cherries and coconut (weirdo). He'd just have digestives in it, if it was up to him, but I reckon you may as well eat a chocolate digestive in that case and save yourself some cooking!!

Weirdo, as you say. Doesn't he realise that the best choc brownies In The World are chocolate-cherry brownies?

You could just up the raisins instead of using them, and leave out the coconut.

Chocolate cherry brownies - yum! Whenever I want some cake to myself (or ice-cream when I was pg) I buy it with cherries in and say 'oh, sorry, darling - are you sure you don't want some?' He he

I make one for DS with plain chocolate (e.g. Chocolat Menier), Rich Tea biscuits, Golden Syrup and butter. If you wanted the full margarine flavour (why??) you would need to use block margarine like Stork rather than tub margarine or the cake won't harden up (!) in the fridge.

I follow this recipe

300g plain ,300g white chocolate, broken in small pieces
225ml whipping cream
325g unsalted Butter, melted
6 egg yolks
85g icing sugar, sifted

  1. Line a loaf tin with cling film, making sure the film is pushed into all the corners.
  1. Put the chocolate and cream in a heat-proof bowl set over a saucepan of boiling water. Stir carefully until smooth and lump free.
  1. Add the melted butter to the chocolate, whisking well to fully incorporate all the ingredients. Keep warm.
  1. Put the egg yolks and in a large heatproof bowl set over another saucepan of boiling water. Beat vigorously for about 5 minutes until mixture is thick, pale and at the ribbon stage.
  1. A little at a time, add the warm chocolate mixture to the yolk mixture, whisking well.
  1. Pour the chocolate mixture into the prepared loaf tin.
  1. (my addition) poke your favourite minature heroes into the mix, I get as many in as possible, do this whilst the mix is still warm so they melt in slightly.

Knock on the work surface to release any air bubbles. Allow to cool then chill for several hours.

When you slice it it looks fabulous and is great served with icecream.

Why?!!! For that classic, school-fete taste, of course! It's all about nostalgia, really! I love love love the miniature heroes one and will def make that too, but sometimes you need a bit of a classic!
