Spicy Soup Ideas

I need some ideas for spicy soups - I love the covent garden spicy butternut squash and sweet potato soup but want to make my own and try to fit it in with slimming world.

Any ideas?

Spicy parsnip? I'm still getting a few in my veg box (apparently they have stored well this yr because of the cold winter)

Just add variou spices (maybe garam masala with some ginger and garlic?)

Not sure how well this would fit in with slimming world, but I'm quite partial to the sweet potato and chorizo soup from Jamie's minstry of food book.

I do a lovely one bu it has cocnut milk or cream in so maybe not okay?

Fry onions, carrots, sweet potatoes, parsnips in a bit of olive oil. Add cumin seeds, turmeric, chilli flakes and black pepper, maybe mustard seeds. Add about 8 ounces of red lentils, a tub of passata (if you want, not vital) a can of coconut milk (or coconut cream) and some stock. Cook until lentils are soft then blend. Watch the liquid content - best to make it a bit too thick and add a bit more water after blending.

If you can't have the coconut milk there's a much simpler one which is based on a Rose Elliot recipe.

Fry an onion, a carrot, couple of sticks of celery. Add cumin, turmeric, chilli flakes. 8 ounce of red lentils and a litre and a half of stock. Cook. Add lemon juice. Blend.

coconut - cocnuts are an entirely different species I believe.

I made a spicy sweet potato soup but cant rememebr exact messurments

sweet potato
onions
carrots
celery
chicken stock
cumin
curry powder
paprika
and cream, which you can substitute with low fat fromage frais

I make a spicy Thai soup. So ridiculously easy.

Add chunks of raw sweet potato and whatever veg you like to a pot of stock (I use chicken stock, but veg is fine if you prefer). The veg I like best - mixed peppers, green beans and broccoli (but in big chunks, as cooks quickly). Bring to the boil, stir in some Thai red curry paste and pour in a can of coconut milk (or less if you want a less fattening version), then let simmer for about 30 mins.

Blend for a smooth soup.

Hi Aunt Maggie

1 small pumpkin, cut deseeded etc and cut into chunks about 1 inch square.

Spray with Fry Lite and roast in oven, gas mark 6 for about 30 mins.

Meanwhile Fry Lite saucepan and cook one onion, chopped quite small with 1 teaspoon lazy garlic and one teaspoon lazy ginger.

Once pumpkin roasted put into saucepan and add stock made with vecon or a normal chicken stock cube (about 1 pint).

Bring to boil, then wizz in blender till smooth.

No need to add any cream/coco milk but if you like creamy soups add some no fat fromage frais once slightly cooled.

I love this soup and make it at least once a week - sometimes even dry fry the seeds and add at the end.

Oh, If you use chicken stock cube add 1/2 syn per serving (this should serve 3, but I reckon I can eat the lot!).
