I give up. What on earth are you feeding you 14 month old for lunch and tea?

She is so fussy and we seem to live in an endless circle of fishfingers, which she loves, pasta, peas, fruit and toast. She doesn't really like meat and I'm a crap cook so someone help me please before she turns into a fishfinger!

I knew you'd all have ideas. All I can come up with is scrambled egg! Hmm salad. She's not had that yet as was too little last summer and weather hasn't been warm enough yet...

fishfingers are fine though. Mine loves them with loads of veg and eats it all with his fingers as fast as he can lol

fish pie is a hit here (or even tinned salmon/tuna, mashed pots and some cheese sauce if you haven't got time to make a fish pie)

DD is 23 months and still isn't keen on meat Think its a texture thing

DD loves little cherry toms, grated carrot and cucumber as a side - I think they're quite fun to eat from a texture perspective! Salad is for all seasons

I sometimes cheat and give DD a COOK meal and she loves the red lentil and potato bake one and it is packed with veggies, 100% organic blah di blah. Always good to have in the freezer IMO!

Veg chilli - olive oil, onions, smoked paprika, peppers, mushrooms, courgettes, kidney beans, tinned tomatoes and tomato puree - add in that order, cook for a couple of mins before adding the next thing, then simmer for half an hour or so - add a wee bit of water at the start if it looks like it needs it.
Serve with rice and mashed avocado. Make lots as it freezes really well, and is nutritious and fun to eat. According to dd and my nieces, anyway...

Potato wedges very easy - slice potatoes into wedges, wash and dry, toss in bowl with olive oil and maybe some smoked paprika or herbs - put on pre-heated baking sheet into hot oven for about half an hour.

salmon rice and peas is a favourite here. we keep DS-size chunks of salmon in the freezer in little tubs (just chop up a fillet or two), 10 seconds to defrost in the microwave, then steam it above the rice, bung in the peas with the rice at the last minute. super easy, yummy with butter and pepper, and lots of omega3.

Cous cous with chunks of tomato, cucumber, and cottage cheese or tuna, with some herbs. DD also loves olives in this.

Or add roasted veg - mushrooms, squash, courgettes, tomatoes, garlic

Pancakes - add veg/cheese/tuna/fruit to the mix as required - make little fat ones - great finger food/on the go lunches.

mine's 2yo but still loves the same stuff;
cheese on toast
salad (chunks of tomato, cucumber, little bit of lettuce which she's not keen on but will eat if told it's carrott. Chunks of carrott, grated cheese)
scrambled eggs, boiled eggs, omelette
bit of whatever we had for tea the night before
pasta, either naked with melty cheese on top or with tomato sauce

Dead easy to make batches of chicken/fish fingers.

chicken strips/salmon and/or white fish chunks
beaten egg
flour
breadcrumbs & plain oats (about half and half but to own taste and what you have in cupboard)

  • Cut your (raw) meat or fish into whatever size you want - either one-bite size, or fingers/dippers.

  • Coat first in the flour, the toss in the egg and then in the breadcrumb & oat mix . Chill in fridge for half hour or so, then bake on greased baking tray for approx 20 mins at gas 5 until cooked.

Can be cooled then frozen, and blasted in the micro when needed. All you need to do is cook a few veggies/make side salad to accompany them.

These are healthy as not fried, oats are slow release energy, great for using leftover bread (at the risk of sounding too domestic goddess, when you get old bread, blitz into crumbs and freeze until you need them - bear with me, I haven;t got a job at the moment!), and the chicken and fish is really good lean protein. And you know exactly what's in them too.

You can also use the same coating method for fishcakes - tin of salmon or tuna added to mashed potato and any veg you like - cooked peas or brocolli good - mixed together, shaped into ckes and coated and baked until browned and crispy.

We do fishcakes too, but dd wasn't that keen on any coatings, so same as lucanom's recipe, but just shaped and fried in a little olive oil. Make stacks and freeze them uncooked.

Tonight dd hoovered up mushroom and chickpea curry - this base which looks cumbersome to make, but is dead easy, and you can make stacks and freeze portions in bags. I fried a few mushrooms, added a tin of chickpeas, added a couple of portions of sauce and it was gorgeous. And mind-bendingly nutritious!

Lunch: sandwiches (tuna, ham, chicken, cheese) or toast (with sardines, peanut butter, pate). Yoghurt.

Dinner - anything and everything. Favourites include (mild) thai green chicken curry and rice, shepherd's pie, pasta with pesto. Lots of jacket potatoes too.
