I use sunflower or rapeseed oil.

Fry once at 100deg for 10 mins

Drain

Fry off at 180 deg until suitably crispy.

Is that what the blessed Gordon does?

After chipping the potatoes, I rinse them off then toss them them in a bowl with a small amount of olive oil. Then, I add either paprika or curry powder and toss them again before putting them on a baking tray for 30 mins.

It's supposed to be all about cooking them twice - once to cook the potato through at a lower temp and then at hotter temp to crisp (as per squiggle)! I have a friend who parboils them to cook and then fries to crisp.

The Blessed Nigel says Maris Piper or King Edwards, uses lard (!), dripping (!) or sunflower oil, and does 5 mins at about 150C and then 3-4 mins at 185C.

I don't have a deep fat fryer or a thermometer , so have never done them properly, but the picture in the book makes me want to weep with hunger!

definitely yes to frying them twice but before cooking, wash them thoroughly and then carefully dry them with kitchen paper. if you don't wash them they won't get crispy and if you don't dry them they'll stick together

God I used to love home made chips, no-one does them anymore cos of chip pan fires, they taste fab. My Mum used to make them alot, it does stink the house out though, I hate that chip fat smell once you have scoffed them. Sunflower oil is best and second what others have said make sure the potatos are dry when you have washed them.

I use Maris Pipers, rub them with salt and black pepper, then into inch deep hot sunflower oil in a roasting tray for 30 minutes. Once golden I turn them out and blot them with kitchen towels and then put back into the oven (without oil) for five minutes.

Where can i buy the metal sieve ( with drain hook ) or the whole chip pan - all the cheap ones in argos are no good the handle breaks off ,the ones in posher shops are useless for french fries as sieve is too wide,electric ones are too big - i only cook chips occaisionally and all my local chip shops are rubbish.
