Could I cook jackets potatoes and freeze them?

I've just bought a large bag of baking potatoes reduced to 40p! A bargain but I don't want them to go to waste. Could I could some of them and freeze them and then microwave them for an easy dinner or would that be really rank?

don't see why not - you can buy jps suitable for freezing in the supermarket. Stuff them with cheese and onion first!

I wouldn't if I were you - reheated jacket potatoes always taste revolting IMO. Potatoes keep for quite a whole in the fridge in any case, and it would probably take longer to microwave a cooked one from frozen than to just cook a raw one.

Mashed potato freezes quite well though - how about making a load and freezing it in portion sized freezer bags?
