Mini Victoria Sponge Cupcakes? Cupcake or Muffin recipe?

I love butterfly fairy cakes but wanted to do a bigger more adult version. So I thought about putting jam and buttercream on them.

Should I use a fairy cake, muffin or cupcake recipe? Is there any difference? I guess if I use a victoria sponge mix it wouldn't rise in the cases as well?

I am a baking novice, so be gentle with me!

Victoria sponge mix would work well and would rise in the cases.

I can get you a lovely cupcake recipe (yes, it is different) and they come out of the oven flat, so alot easier to put frosting on top

Hi Stirling. I used a cupcake recipe I got off t'internet in the end, it was very light.

I don't suppose you have access to the latest Asda free magazine do you? (It has cupcakes on the cover)

Well I made them (recipe inside magazine) and they were fab and quite large too. I made them in muffin cases and they were certainly muffin sized - ie big - but def fairy cakes. They were very good.

I got this out of Delicious April issue and have already made them twice and they are lovely.

120g plain flour
140g caster sugar
1 1/2 tsp baking powder
45g butter at room temp
120ml whole milk
1 large f/r egg
1/4 tsp vanilla extract

heat oven to 180/160 fan/gas 4.
Put flour, sugar, baking powder, butter and pinch salt in a bowl and using a hand held mixer, mix it all for a couple of minutes till you have something that resembles sand.

Gradually pour in half the milk and mix till combined.

Whisk the egg, remaining milk and vanilla and then add this to the flour mixture and beat for a few minutes until smooth.

Divide between 12 large muffin type cases and bake for 20-25 mins or until golden. They come out lovely and flat, perfect for the frosting.

Hold on - I'll post the frosting recipe in a while

Funnily enough there is an Asda opening in our town on Monday, so I may just pay it a visit.
