Jerusalem artichokes... what exactly am I supposed to do with them?

I got a bagfull of them in my veg delivery box and they have been lurking in the cupboard, along with some pak choi (I think). I was thinking soup?

I have found a recipe...

JERUSALEM ARTICHOKE SOUP RECIPE
Prepare 750g (3 1/2 cups) Jerusalem artichokes (or a mix of artichokes and potatoes) by par-boiling and peeling. Cut into chunks. Gently cook 1 large chopped onion and a crushed clove of garlic in a little oil to release the garlic flavour. Add 2 sticks celery, stringed and chopped and the artichokes. Pour on 1 litre (4 cups) hot stock, bring to the boil, reduce to a simmer and cook, covered for 20 minutes or until the vegetables are tender. Puree in a blender, and add milk or more stock to thin if necessary. Season to taste.

So I made the soup. I added some fennel that was lurking in the fridge too. It is bubbling away and smells quite nice.

"which way soever they be dressed and eaten, they stir and cause a filthy loathsome stinking wind within the body, thereby causing the belly to be pained and tormented, and are a meat more fit for swine than men." [4]

They also calling them fartichokes, my DH dreads my smoked garlic/jerusalem artichoke soup as the duvet will float near ceiling after eating a bowl of it but IMO it is worth the farting

Yes, a good fart can be enjoyable. But last time I made jerusalem artichoke puree I can tell you that both DH and I were in pain with wind. And as for the smell ...!
