What can one do with frozen chicken livers?

Bought some of these thinking I could make baby food and freeze but now thinking it's not wise to defrost, cook, freese, defrost and cook again with offal.

So, any ideas apart from pate?

not for dc really but i like chicken liver salad with pancetta - bed of leaves, fried livers and pancetta, drizzle with raspberry vinegar. yum!

chicken livers with pasta - fry shallot and garlic, add livers, fry, add tbsp tomato puree and wine/sherry, herbs (can't remember what and have lent book to friend), season and toss with pasta.

Found a tub of chicken livers right at the back when the freezer defrosted overnight, so i added them to a spag bol sauce.
Really, really yummy.

Have you got annabel karmel's baby and toddler meal planner? She has some great liver recipes in there, luckily ds loves it! You will be fine freezing/ defrosting/cooking etc as long as everything is properly cooked. I won't eat it unfortunately as had bad experience at school which put me off for life!

ooh... ive got a really good one.

make nice salad dressed with a bit of olive oil and balsamic vinegar (just leaves are fine).

then fry some shallots, add garlic, black pepper. then add the livers, fry quickly, add a teaspoon of curry paste and a big splash of balsamic vinegar. add fresh coriander or basil to wilt quickly and put chick liv mixture on salad. add squeeze of orange of lime to taste.

my god... its to die for honestly... you can add red peppers at same time as shallots (they should be sliced).

Yeah if they're not defrosted you could have quite a GBH claim on your hands.
OK, am going to go with Makymummy's enthusiasm, will buy some salad bits and coriander tomorrow.

My DS's love these in rice.

Cook some rice either in the microwave or on top of the gas, in the meantime

fry off onion, garlic, pepper, mushrooms and any other bits lurking about in your fridge. When softened, put on a plate in the oven to keep warm.

Cut your chicken livers up, season and then fry off quickly, tip the veggies back in to the pan.

Meanwhile your rice should now be cooked, mix in with the livers and veg.

Well well, it was all right, even DH said so! Did it with a bit of risotto on the side too, completely contrasting flavours but we don't care.
