Does anyone know if you can freeze beaten eggs? I seem to remember someone telling me you could. We keep chickens and have a real glut of them at the mo.

I've frozen egg whites before which were ok. Not sure about the yolks, though. Sorry, not much help really!

Thats useful - did you whip them first?

No, I froze them just as they were. I'm sure it was Nigella who first gave me the idea.

Why don't you try freezing one whole egg (not in its shell, obviously!), then try scrambling it after defrosting it.

Nigella freezes eggs. I believe you can just divide them up as you feel would be most useful to you, either whole or separated. Handy to remember if you are making something that requires a whole load of whites, freeze the yokes and make custard or something another day (not that I've ever done it but I do have fantasies about being so organised ).

I put a box of eggs in the freezer by mistake (just dumped the bag of freezer stuff in and the box was at the bottom) and didn't think to defrost them and see if they were OK, just chucked them.
