What can i do with sundays leftover roast beef for dinner?

We have some boneless (silverside/topside??) roast beef that i need to finish tonight, a good 500/600g what can i do with it? i have had roast beef sandwiches already but need something more child friendly

Shepherd's pie uses lamb. You know, shepherds have the sheep, and cottagers like to be filled with bee... No, forget it.

I'd whizz it up in the food processor into fake-mince, then make a cottage pie out of it. or chuck in tinned toms and herbs for spag bol, or chilli for, er, chilli!

Cook rice, cook (or warm up leftover) peas, sweetcorn, broccoli florets - any or all or any other vegetables. Cut up leftover meat into very little pieces and warm up. Stir everything together.Eat.

The secret is all the non-rice ingredients have to be very small.

Make a noodle soup with some chicken stock or miso, soy, chopped garlic, a bit of chilli for heat, fresh coriander, greens like pak choi, mange tout etc, mushrooms, add ramen noodles and shedded beef, warm through and and dish up. Yum!

rissoles or cottage pie are the two 'staple' uses of leftover here. Also risotto.

TDWP: Do you have a thai beef salad recipe. I get one from my local salad place which is delicious, but not sure I could mimic the sauce...

I generally use 4 tbs fish sauce, 4 tbs brown sugar, 2 chopped red chillis, grated lemongrass, juice of one lime, beansprouts, finely shredded iceberg lettuce, shredded cucumber, spring onions.

And marinate the meat in five spice, groundnut oil and lime juice before cooking.

One question, I've only ever used dried lemon grass - but can I grate that?

Oh, and the salad I buy has toasted sesame seeds on it too which is delicious if you're interested.

I'm not sure, the dried lemongrass I have is ground already. Fresh is much nicer, most supermarkets stock it. Sesame seeds sound lovely, I'll try that thanks.

I have a vague memory of my local thai supermarket telling me I could freeze my lemongrass the same way I do Kaffir leaves or chillis so I should check that.
