Just got given a breadmaker - any good recipes to try?

Just acquired breadmaker. The recipes with it though aren't much good for me as they all (even the basic ones) seem to require powdered milk and I don't eat dairy. I can replace the butter with oil but not sure
a) why milk powder?
and
b) what I can replace it with

Any good recipes I could try?

I have wholemeal flour adn white flour for it.

I have made a basic wholemeal loaf (from the back of the yeast packet) and it's good. Would like to try some more.

You don't need milk powder - all you need is yeast, flour, salt, water and a little oil. Try adding some seeds to a wholemeal loa or make focaccia with a pizza dough recipe, then topping with olive oil, onion and sage.

ta that makes more sense. I was getting confused reading the recipes with it.

Milk powder just seems weird.

The milk powder just helps increase the shelf life of the bread (not sure how) - but as it is not likely to last longer than a day if it is yummy that should not be a problem!

Agree - just leave the milk powder out. I've never used it because the recipe booklet couldn't give me a good reason to put it in. You can use dairy free margarine instead of butter too.

this is going to be stupid question but what is spelt flour?

I want some seeds and stuff to put in it but can't really decide what ones to use.

Also wondering what nuts would taste like with it.

WIth figs can you sort of puree them first? ALso prunes maybe as would be good for ds and his constipation.

I have much better success with my breadmaker since I bought the wrong yeast by mistake.
I got the kind that has to be activated in warm sugary water before starting to make the bread, instead of the instant stuff that you just bung in the machine.

So my recipe advice would be to never buy the sachets of yeast (works out SOOO expensive) but buy the Allinsons or Hovis in little tins, and read the instructions so you buy the one that you activate with water first.

Then, you just put it in the machine with the liquids stated in your chosen recipe, but make sure the liquids are warm, add the sugar, give it a stir and leave for 20 mins or so before adding the other ingredients.

Also if you put butter in make sure its warm and soft.

That's interesting Flib, will try that.

I use mine a lot for pizza dough. The pizzas only take 10 mins in a hot oven. this recipe worked okay just using strong plain flour, so don't have to have semolina flour or 00 flour.

Also, I use white bread flour from lidl or Asda own brand bread flour as those are really cheap, then just a bit, ie few tablespoons of something at bit more interesting like wholemeal or Rye flour to give it some texture and bit more taste.

really? what brand is your breadmaker? none of the recipes in ours use powdered milk - a few of the richer ones use milk + water but I am sure just water would work. I like the spiced raisin bread from our (panasonic) recipe leaflet but don't have the energy to find and copy it right now [sorry]
