I am doing Yorkshires but haven't got any lard. What can I use instead forgreasing the bun trays please?

If it's just greasing the trays rather than actually in the recipe I don't think it really matters - use anything. Butter, bit of sunflower oil? Don't waste your extra-virgin olive oil on this - it would taste funny.

I have sunflower, olive and corn oils as well as butter. Which is best and how much please?

I wouldn't use butter as it would burn at the high temp needed. Sunflower oil will be fine - a little puddle in the bottom of each round bit is what I use.

Sorry, another question.

How long heating the oil before I put the batter in and then is it 20 minutes for the puds to cook? DS1 complained they were a bit burnt before. They were just very crispy imo.

i heat the oil for about 10 mins, the hotter the better and 20 mins is about right, depending on your oven. Mine is a turbo fan oven and I only have about a nano-second between ready and burnt to a crisp

DH is cooking us all a joint of beef with all the trimmings

he nearly fainted at the price - £14.50
though he did nearly punch the woman in the shop when she said "make sure you put a bit of water in with that, don't let it get too dry"
He has been cooking for 25 years! And I have never cooked roast beef in my life!

Well done! Yorkhires are difficult. Luckily I don't really like them so no-one expects me to be able to cook them
