I need the bestest recipe ever for banana cake!

Our organic box has contained 2 bunches of bananas for the last few weeks. As we don't actually like eating banana all that much we've got a bit of a banana backlog going on. Can anyone give me a good recipe for bananacake for people who don't actually like bananas all that much?

Exactly same as Misee, we are making this later. I tend to add a little bit of honey or even golden syrup. Do it in a loaf tin then slice and add a little butter for extra scumminess! I'm going to experiment by also making it with plums as I have tons of them left!!

Banana Loaf ? Best Ever

4oz butter
4 oz brown sugar (use any color)
1 egg
1Ilb banana
3 tbsp yogurt, any flavor or plain or crème fraise
1 tsp vanilla ess
8 oz plain flour
1 tsp bicarb
1 tsp cinnamon
4 oz raisins

Gas 4 oven with shelf in middle
Grease and line a 7x11 loaf tin

Put the butter and sugar in a bowl and beat together ? or put in food processor and push button. Then add egg and beat till smooth. Add banana?s if doing by hand mash first, if in and push processor then just chop them into the bowl button. Add yogurt and vanilla essence.

Sift in the flour, bicarb, cinnamon and push button or stir.

Finally add the raisins (don?t push button as the raisins will disappear!!) just mix in with a spoon and then pour the mixture into the bread /loaf tin and level off with a shake and put in the oven for one hour and twenty mins ? check a cocktail stick comes out clean and it is cooked.

Turn out and let it cool. Then cut into slices and put each slice in a freezer bag ? pop in the freezer and use when required Ideal for pack ? ups as the slice of loaf will have defrosted by lunch time.

Try using dried blueberries or cranberries instead or aswell as the sultanas. This cake does keep well in a tin and will mature with age ? if ever allowed.

I made it this week and didn't have yogurt or creme fraich so put in a couple of tablespoons of milk and it was still lovely and lasted all of three days.

This is more loaf than cake, it is moist and not lights or dry

Thanks for all the replies. I'm going to try IvyKaty44's recipe today, just because it requires 1lb of bananas and I really really really need a recipe that requires loads of banana!
Misdee your recipe looks quite easy, so I'll try that next time. I think I'll try it with some chocolate chips like someone suggested, things are always nicer with chocolate

IvyKaty Your banana loaf was gorgeous. I added some walnuts, just because I like walnuts and to give it a bit of crunch! DS loved it too and he helped me all the way. He approves the batter too .

I use the same recipe as Ivykaty, but without the raisins. I use white chocolate chips.... and sometimes chopped walnuts or hazel nuts.

And a cream cheese frosting.

If you want an easy one with stuff from the store cupboard I got one from mumsnet years ago.

For 6 bananas

Weigh for eggs in their shells, weigh out the same amount of flour and the same amount of butter. Weigh out half the amount of sugar.

Cream butter and eggs, mix in eggs, then flour. Mash bananas with a little milk and mix in. Bung in the oven.

I make frosting with cream cheese, icing sugar and vanilla essence.

I must say, I left the raisins out as well. I'm not too keen on berries or raisins in cakes. I'll try white chocolate chips ShadowOfBlueTiger, that sounds yummy.
Amapoleon. Thanks for that recipe. Sounds easy indeed. The Nigella recipe was asking for things I don't generally have in the cupboard, but the one from Ivy and yours ask for things I always have in the house. I'll have to add it to my list of recipes to try and I'll see which one it the best

I am glad you liked it, I have used it on and off for several years and tryed other types but never felt they were quite how I liked it.
