veggies, suggest something for us to try

I'm trying to introduce more variety so, any veggie suggestions I can try out on my lo & oh

Not fussy what they are, so long as it's tasty & relatively simple

Stir fry vege, thai curry paste, coconut milk and cashew nuts with rice and loads of fresh coriander.

Roast some vege - I use peppers, red onions, garlic then stick a drained tin of sweetcorn in for the last few minutes. Mix with a jar of red pesto, cooked pasta and a dollop of cream cheese plus lots of black pepper and maybe some chilli flakes.

Roasted veg and baked halloumi. So simple and tasty.

Chuck chunks of butternut squash/sweet potato, mixed peppers, courgettes and onion into a big roasting dish. Dot thick-ish slices of halloumi cheese in between veg. Drizzle olive oil over and add some herbs if you like - a sprinkle of dried mint is quite nice with halloumi, or sprigs of fresh rosemary. Bake it at quite a high temp for about 40 mins, or until veg cooked and halloumi golden. Yum.

Oh, and my favourite that I always bang on about on MN just because it is so easy - chickpea tagine.

Dice an onion and soften in olive oil in a big saucepan/lidded frying pan. Add a tablespoon of cumin and a tablespoon of cinnamon (big measures, I know, but needed). Mix around with onion for a min or two, being careful not to let the spices burn. Add a drained can of chickpeas, a can of chopped tomatoes, a big handful of sultanas and a couple of cinnamon sticks. Put lid on and bring to the boil, then turn heat down and simmer for 25-30 mins. Add a bit of water or stock if it seems to be drying out. You can also add chopped, dried apricots instead of the sultanas if you prefer a less sweet taste. Serve on it's own with crusty bread or with rice/cous cous and salad.

cook fillet of quorn, then add red pesto and creme fraiche, put on top of tagliatelle

Veggie chilli is a good one, too. I don't bother with quorn/soya because I dont like it. I fry up some diced onions, pepper and celery, add a can of kidney beans, a can of tomatoes, some chilli spices and a big handful of grated carrot (gives it a sweetness and a nice texture). Takes about 30 mins bubbling on the hob. Serve with rice/salad or tacos & grated cheese etc.

MrsM, we eat anything really, just after something new to try & I don't have a lot of veggie type stuff in my repertoire so thought it would be nice to give something different a try.

I will give the chickpea tagine a go next week (shopping day here), never tried anything like that. Not tried veggie chilli either so will try that too

Thai veggie curry sounds delish as well, I know that would go down well here since my oh is particularly taken with thai red curries at the mo

The thai veggie curry is also really nice with marinated tofu or with omelettel strips instead of the cashews.

veg goulash with mushrooms nice too; various pies/tarts - goat's cheese and caramelised onion or roasted tomato; cheese and potato; leek and gruyere; onion and feta - just realised these all have dairy in them - is that ok?

soufflee if you eat eggs?

pasta bakes with loads of veg

huge frittatas with lots of veg and cheese if you eat it

falafal, houmous, tabbouleh and pita plus roasted artichokes etc

home-made veggie burgers in sesame buns with nice salsa/

I also make a baked veggie loaf out of mugful of cooked risotto rice, grated and fried onion, garlic, potato, carrot, courgette etc and mix with an egg and 50g parmesan then bake in oven for 45 mins in loaf tin - delish but unfortunately made-up and guessed recipe so am a bit vague about amounts!!

also tons of mexican ideas - quesadillas with spring onions and salsa and cheese - yum!! fajitas with portobello mushrooms, mixed peppers, cajun seasoning and then guacamole, refried beans and soured cream on the side. Taco shells with grated veg, cheese, iceberg lettuce and guacamole, soured cream etc.

home made lentil bolognese sauce
this is my DD's favourite!

Fry 1 finely chopped onion 1-2 cloves garlic in olive oil till soft. Add finely chopped large carrot and red pepper, fry another 5 mins (you can add other veggies like courgette too) Add 6-8oz red lentils, tin of tomatoes and about 600ml stock, 2tsp mixed herbs and cook away till veggies are cooked and lentils mushy. If it goes dry or begins to stick to pan just add more water. Then use hand blender or liquidise.
Splodge it on tagliatelle or spaghetti with of grated cheddar
