new flat, no oven, just a microwave and a hob, and an 18 month old - what would you make?

I've just moved to a flat with a hob and a microwave. I am also at home ft after stopping work. I want to help my daughter become more adventurous / proficient in her eating because while I was working she was in a rut of eggs, Hipp Organic jars, Ella's kitchen pouches and pasta. She doesn't have back teeth yet and tends to pull sandwiches apart and chuck everything on the floor. But she is learning to be quite good with a spoon and fork. Recently we've had success with egg fried rice with ham, broccoli and soy sauce, and chicken marinated in yoghurt with garlic and lemon with veg. What would you try?

Sounds like you are doing really well already!
Pasta pasta and more pasta here too!
Eggy bread, crumbed fish or chicked chunks easy to do on hob in a bit of oil, tortillas with variety of chicken or mince based fillings, omelette (eggy theme emerging)
my children had tuna pasta sweetcorn cheese oh about 3 meals out of 7 at this age!

wholewheat pancakes with cheese inside, and if she'll eat it (cut up very small) broccoli pieces or chopped frozen spinach.

home-made soups are fab for 18month old-chicken and veg soup, leek and potato, carrot, lentil and sweet potato

Why don't you get a slow cooker so you can cook joints of meat, casseroles, stews etc

You can make fish cakes really easily - salmon, mashed potato and grated veg too then dip in flour and shallow fry. My DS adores baked beans - you can get microwaveable mini pots. Omelette, bolognese (can serve with mash as well as pasta and I always add in loads of veg to it), microwaved baked potato. I hardly ever turn my oven on when I cook food for my toddler.

chicken fingers- chicken breasts cut into strips, dipped in egg then flour or breadcrumbs and dep fried. drain off onto kitchen paper. make yummy finger food, you can serve with raw veggies and boiled rice/pasta. you can fry up a huge batch and freeze, taking out a couple when you need them. you can also ad lots of veggies and cheese to omelets for a good and easy meal
