Do you use SR flour or yeast???

From the Sunday Times...

115g currants
115g sultanas
115g raisins
180g fructose
300ml hot, strong tea (darjeeling)
Sunflower oil for greasing
Zest of 1 orange, finely grated
Zest of 1 lemon, finely grated
175g granary flour
100g plain, white flour
1 1/4 tsp baking powder
1 medium egg, beaten

Measure the dried fruit and fructose into a bowl
Pour over the hot tea, cover and leave overnight (if your kitchen is warm, allow the mixture to cool, then cover and store in the fridge)
Pre-heat oven to 150C/300F/Gas Mark 2
Line 900g loaf tin with greaseproof paper and lightly grease
Stir orange and lemon zest into the tea soaked fruit
In a large bowl, mix togehter the flours, baking powder, followed by fruit and then remaining liquid
Stir in the egg, mix thoroughly and spoon mixture into the tin
Level and place in centre of oven
Bake for between 1 1/2 and 1 3/4 hours or until well risen and firm to touch and skewer comes out clean
Remove from oven and allow to rest for 10 minutes before turning out onto a cooling rack
Once cold, wrap in foil

I have an old recipe for this from an old welsh cookbook.

10 oz mixed dried fruit
2/3 pint hot tea (no milk)
3 oz soft brown sugar
grated rind lemon
12 oz self raising flour
1 tsp mixed spice
1 large egg

Soak the mixed fruit in the tea overnight.

Oven at gas mark 4 and grease/line a 2lb loaf tin. Strain the fruit and reserve the liquid. Mix the fruit together with the other ingrediants in a bowl, adding the reserved liquid a little at a time until a soft dropping consistency is achieved.

Pour mixture intp the tin and bake for 45-55 mins until risen and firm to the touch.

Cool and serve sliced with butter.

I made it. The traditional one as it looked easier. Nice, not quite as dark as I wanted and a bit sweet. Will try the other one next!

I've made it again and amended it thus. Very good indeed and much nicer (though less chewy) than soreen.

2/3 pint hot tea (no milk)
12 oz wholemeal SR flour 1 tsp mixed spice
2 eggs

Soak the mixed fruit in the tea overnight.

Oven at gas mark 4 (170) and grease/line a 2lb loaf tin. Mix eggs into fruit then add spice and flour ? it should be a soft dropping consistency. Mix well.

Pour mixture into the tin and bake for 50 mins until risen and firm to the touch, switch off oven and leave for a further 10 mins. Do not cut until cool. Serve sliced with butter.
