brunch on a train!

foody ideas please ladies - I'm going on a girly weekend and we are travelling through France by train. We have decided to all bring something to share, brunch style and I need ideas. (Smoked salmon sandwiches have been chosen already). Has to be portable, practical to share and posh (ish) nosh!! Champagne already figured into the equation

Just to qualify, I don't mean riciculously posh like beluga caviar but a bit more up-market than Walkers crisps and scotch eggs

Does it have to be homemade? Because M&S do some nice nibbles for picnics.

Homemade tip of the day: Get a packet of puff pasty, make little squares, fill them with

salmon and cream chees
cheese and ham
chicken, herbs and tomatoes etc

then fold the edges towards the middle to make little envelopes. Bake in the oven for 10 mins.

yum! I guess it should be homemade as we are going on a cookery weekend and anyway, I don't have an M&S here sadly. Should add, we leave at 5am so needs to be prepared the night before!!

Any ideas for really good dips? I suppose there's always nice cheese and pre-cut French bread or crackers.

ooh, just seen the chicken idea. Might do chicken fillet 'bites', maybe marinaded in lime, garlic etc. Thanks Mme L

That sounds great, with the marinade. I have made these a few times for brunches with DH's work and always get a lot of compliments.

Or you could make some herb bread with cheese and sliced meats and pickles.

Or what about these? I have cooked gambas in my freezer! Your herb bread also sounds scrummy, maybe with Serrano or Parma ham!

Ingredients
20 large Mediterranean prawns, cooked and peeled
2 limes, zest only
1 red chilli, de-seeded and very finely chopped
For the Japanese mayonnaise
100g/4oz good quality mayonnaise
2-3tsp ready-made wasabi paste, or to taste (available from supermarkets and Japanese stores)
2 spring onions, finely chopped
1-2 tbsp sake
1 lime, zest only, plus juice from ½ the lime

Method

  1. Mix the prawns with the lime zest and chilli and leave to marinate in the fridge, covered, for at least an hour.
  2. For the Japanese mayonnaise, mix all the Japanese mayonnaise ingredients together and transfer to a serving bowl.
  3. Arrange the prawns on a plate and serve with the Japanese mayonnaise, for dipping.

some good quality salami / chorizo

some little cornichons

some herby olives

homemade mackerel pate with lots of lemon juice / pepper

oatcakes

fresh fruit... berries

slices of melon / parma ham.....

That sounds delicious.

You could make little herb rolls instead of a loaf. That could be just torn open and dipped instead of sliced.

And some marinated vegetables, aubergines and courgettes, mushrooms and tomatoes.

I am getting hungry now.

funnily, I am cooking aubergine, courgette, tomatoes etc right now to make veggie lasagne for supper. Almost burned the veg though as was too busy posting on here
