Any nice chickpea recipes - not too much work!

DD loves them but I can't think of anything to do with them apart from minestrone soup... any ideas?...

I had chickpea salad for lunch, mixed with apple, olives, herbs and lemon, nice with bread.

We sometimes have a clear leek and potato soup with tarragon and chickpeas, dcs love that. Also, chorizo, chickpea and tomato stew is delicious.

chickpea and chicken curry. or chickpea and butternut squash for the veggie option. Chickpeas in couscous is lovely with any other veg you have handy.
And you could check out the BBC Good Food website and put chick peas in the ingredients box under recipes.

I love chick peas - I make this very often and everyone likes it. It's my version of a Jamie Oliver recipe

340gr/12oz chickpeas from a tin
1 medium potato, peeled
5 medium leeks
1 tablespoon olive oil
knob of butter
2 cloves of garlic, finely sliced
salt and freshly ground black pepper
850ml/1 1/2 pints chicken or vegetable stock
Parmesan cheese, grated
EV olive oil

1 - wash and slice leeks and cube potatoes

2 - Heat oil and butter add leeks and garlic and salt cook until soft, add chickpeas potoates and 2/3 of the stock. Simmer for 20 min.

3-Puree half and leave the other half whole - this gives a lovely smooth comforting feel but also keeps a bit of texture. Now add enough of the remaining stock to achieve the consistency you like. Check for seasoning, and add Parmesan to taste to round off the flavours.

Falafels this really is idiot proof.

Mash a tine of chickpeas but leave a bit of texture as you don't want puree. Add some cumin, coriander and tumeric. Roll into patty type shapes and cover with breadcrumbs or flour before shallow frying.

I just had a look at the link by BriansAmazingBeard - try altering the quantities and asking it to show in metric!
