Been trying to write a shopping list for an hour - healthy cheap meals needed!

Am so stuck. Seem to be either healthy or cheap but never both. Am preg too so really want to make the effort this week to get a decent amount of fruit/veg on the menu.

as an aside thisisyesterday - what one earth is devilled tofu kebabs? never given my 16mth old tofu, so this has inspired me!

ahh they're lovely, my kids can't get enough of them.
this is the recipe:

8 shallots (or you can just chop up a big onion)
8 little new potatoes
11oz tofu (cubed)
2tbsp tomato puree
2tbsp soy sauce
1tbsp sunflower oil
1tbsp clear honey
1tbsp wholegrain mustard
1 courgette
1 red pepper

put shallots in a bowl of boiling water and leave for 5 mins
cook potatoes for about 10 mins
put all marinade ingredients into a bowl and add tofu.
leave for at least 10 minutes
Heat grill to medium/high and thread veg and tofu onto skewers
grill for about 10 minutes, turning frequently and brushing with marinade before serving.

I sometimes use button mushrooms too which is yummy. and I normlly chuck it all in the marinade as well, not just the tofu

mediterranean roast veg & pasta..

courgette (60p) mixed peppers (£1) and a few mushrooms, roasted in the oven in olive oil with a bit of garlic & basil, sprinkle some grated cheese on for the last few minutes and serve on a bed of wholemeal pasta (79p)..

if this is a bit dry for you, stir passatta (56p) into the pasta before plating up..

OR

tuscan bean soup..

onion, garlic, mixed herbs, tin mixed bean salad & jar of passatta served with crusty bread..

these two are favourites in our household (dh & dd (8) = veggies and me & ds (14) committed meat lovers)

oh and roasted veg with balsamic vinegar. use whatever veg you like (i normally do aubergine, courgette, red pepper, mushroom, onion) put in a big roasting tin, mix with some olive oil, salt and pepper and a good splash of balsamic

then make up some cous cous using veg stock cube.

mix the veg throuigh and add some cubed feta cheese

Thanks for all the ideas. Am having a bit of a veggie week but still managed to spend £55 at Tesco - its so expensive at the moment!

We just eat potatoes (or rice), lots of veg and a little meat for our main meal each day. Very healthy, very cheap.

We make a big pot of chilli and then add 3 tins of mixed beans to it and it does us for 3 meals.

My favourite, tried and true recipe website:

You can narrow searches down to just the UK, health preferences, family, size of portions, and expense.

You can also sign up for daily recipies which I love because they can inspire you to use up something you already may have.

AND lol you can also do searches with a list of ingredients you have to see what you can make with the last bit of tomato sauce and flour or whatever weird combo you have lurking in the fridge
