What shall I make with stem ginger?

A friend has kindly given me a jar of stem ginger. What shall I make with it? I've never used it before, and the balls are scaring me a bit...

We loooove ginger in this house. Chop it up and add to flapjack mixture - yummm! Ginger icecream. Ginger cake with real bits of ginger. Or just slice it up thin and eat it on toast. Oooh I'm hungry now - or is it greedy...??!!

There's a fab stem ginger and chocolate cake in the Green and Black's cookbook. I'll type it out if you're stuck...

Notmumm - I put grated stem ginger in gingerbread - have some on the go at the mo...

Also try finely chopped with icecream.

The gingercake was gorgeous!!!! it was really easy to make and is so nice, if i say so myself! DH has scoffed half of it already.

Its really boosted my baking confidence after last week's fairy cake disaster.

did you make icing with the syrup? if not, try it next time is omnomnomnomnom

stem ginger is also really good in stirfries - the sweetness gives if a lift, esp if you use a little chilli too.

Sorry for delay had to find recipe. Here it is.

Line large roasting tin with baking parch (about 3" high) - it rises like mad ! Put oven on gas mark 2 / 3.

Put dry ingredients in large bowl:
1lb SR flour
0.5lb sugar (I use any mix of brown and/or white)
2 tspns cinnamon
4 tspns dried ginger
1 tspn bicarb soda

Melt together and add to dry ingredients the following:
0.5lb marg / butter
1lb golden syrup (or mix of syrup and treacle)

Beat well and add to mixture:
2 eggs

Boil and add to mixture:
0.5 pint milk

Mix it all up and bake at gas mark 2.5ish for one and half hours.

If I use stem ginger I chop it up and add to dry ingredients to distribute it better through mixture (like adding to muffin mixture otherwise it all sinks to bottom).

You could half the mixture and reduce cooking time to 1 hour on slightly higher temp but cake keeps well if given a chance, which it never is in this house ! lol

it's very nice added to apple pie. Or apple crumble. Or indeed apple anything! Just add it chopped up with the apple filling and, if you like, drizzle a bit of syrup over the top.

OR Dry it off, dip it in chocolate and gobble.... drooooooooooooooool........
