What can I do with green peppers?

Have 4 to use up (they came in a bag of red ones).
I'm a fairly good cook, just devoid of inspiration...

Throw 'em away. Green peppers are hiorrible.

there was a thread on this a few days ago on here- if you scroll down you should be able to find it... think it was called something like surfeit of green peppers.

green peppers are horrible, you're correct. only useful in hot spicy food where you can't really taste them - like chilli con carne, thai green curry, etc.

Stuff them

I love green peppers. I am doing stuffed peppers tonight, just defrosting the sausage meat now and then I will make my stuffing.

One of DD's and DH's fave meals.

Cut in half.
Take out seeds and white pithy stuff.
Put slices of mozzarella in upturned pepper halves.
Add some halved cherry tomatoes.
Drizzle (see, I'm using the correct culinary terms) some pesto over.
Bake for 20 mins.

Ta-dah

Green peppers are rubbish - I don't buy those packs of 3 peppers any more because they always have a rubbish green one. If it's green it's not bloody ripe.

Buy 2 courgettes (rest are stock cupboard ingredients)

Make rattatouille with courgettes, green pepper, tinned toms, garlic, veg stock/boullion, (not too runny though, in fact the powder or crumbled cubes are best) onion and mushrooms, put in a large dish. Top with mashed potato, dot with butter and bake for 30 minutes or so to crisp up the potato - you get a fab veggie shepherds' pie thing with no lentils in sight.

I agree they're ok if they're cooked for long enough. I usually make Piperade with them (cooked with tomatoes then scramble some eggs in. Sounds yuk but it's nice) but I wondered if there were any other ideas. The 'shepherds pie' sounds nice. & I've got some courgettes...

There is a fab paella in the Moro book, the basis of which is green peppers (only 1, but you could use 2!), big Spanish onions and fennel seeds. Paella de rape (monkfish in Spanish). Delicious.

also use in bolognaise..

Do you evre make pizza at home? green peppers are truly delicious on pizza. I don't know why. green pepper, mushroom and bacon is yummy. Or green pepper, feta and ham/bacon.

or just dice them and freeze small portions. then add portion to bolognese sauce when cooking, or shepherd's pie, or lasagna etc.

My sisters' dp does a great dish.... stuffed green pepers with haggis and philadelphia, obviously you have to be a fan of haggis!

Stuffed green peppers are gorgeous. I live in France and lots of people here stuff peppers and aubergines.

As said earlier you need some stuffing which can be minced pork or cooked rice if you are veggie. Stuff peppers, add any seasoning you fancy splash on a bit of olive oil and put in a not too hot oven and roast gently for a longish time (prob about 180 for 40 mins, sorry not very good at times).

Peppers will go all melting and lovely. Meat version is nice served with rice. Veggie version nice with a crisp salad and garlic bread.

I really fancy some now actually.
